Roasted Sweet Potato, Chickpea and Quinoa Salad Recipe

Vegan salad made with roasted sweet potatoes, baked spicy chickpeas, quinoa, pomegranate seeds, walnuts and veggies by tossing them in a simple dressing made of mustard and dates!

Until my 20s, a salad in my life was just a plateful of sliced tomatoes or cucumbers. A boring but supremely healthy plate of food that neither tempted the vision nor the appetite. And then, I found this salad bar in a mall food court that totally made me love salads. While salad bars are extremely common in the west, there aren't many out here in the tropical sub continent. May be it is the weather or may be it just that there is no demand. I loved the idea that I could pile up my bowl with anything and everything and make my own salad. Unfortunately, the place shut down after a while. But ever since, I love DIY salads.

While I eat salads, I rarely post their recipes. When I make salads at home, they are usually very simple - veggies tossed in a simple vinaigrette, so I don't share them with you. But this salad, I had to share!!

Where do I begin with this salad... it has so many delicious things all mixed together.
  • Roasted Sweet Potato - I found some gorgeous orange sweet potato (a rare find in Bangalore), so I bought some and roasted it in the oven with olive oil, salt, cumin and smoked paprika until they were soft and fabulous. Alternatively, roast some pumpkin.
  • Spicy baked Chickpeas - You have to add some crunch to the salad, and in this case, these chickpeas are the crunch element. I soaked chickpeas overnight and cooked them with salt until soft. Then I peeled them and roasted them with olive oil and salt. I tossed in some red chilli powder after removing from the oven. You can buy crispy chickpeas or you can just add boiled chickpeas.
  • Quinoa - This is what makes the salad filling and increases the protein content of the salad. If you cannot find quinoa, use millet or buckwheat.
  • Blanched Vegetables - I blanched some broccoli and beans and added them to the salad. I love broccoli and beans are just healthy. Add any of your favorite veggies, blanched or raw.
  • Pomegranate - I love pomegranate and I will add this to any salad I can. These sweet juicy pink seeds make any salad pop. They add a slight sweetness to the salad and complement the sweet potato really well.
  • Walnuts - You can never have enough crunch in a salad. Add in any nuts you love, I personally love walnuts. Plus, they are good for your brain.
  • Lettuce - Salad isn't salad until you have some green leaves. And while I list is last, it is most definitely the mandatory element of the salad. You can replace it with kale or baby spinach.
Since the salad itself had such gorgeous ingredients, I kept the dressing simple, yet interesting. Mustard, dates, extra virgin olive oil, vinegar, garlic and salt. Just blend everything until you have a tart sweet and hot dressing. 

This salad is substantial enough to be a meal in itself. In fact, it was our dinner and it kept us feeling full for a long time. However, it felt light also. 

The salad has ingredients that need preparation - roasting, baking, blanching and boiling. You can prep all of these in advance. That is exactly what I did. I roasted the sweet potato and chickpeas the day before. The chickpeas tend to get a little soft and chewy, but you can pop them in the oven for a while before adding to the salad to crisp them up again. I boiled the quinoa the previous day too. If you plan to make the salad the very next day, then you can also blanch the veggies the night before.

Roasted Sweet Potato, Chickpea and Quinoa Salad Recipe

Prep Time:     8 hours
Cook time:     60 minutes
Yield:                Serves 2-3


Ingredients:


1 cup Quinoa (uncooked)
1 medium Sweet Potato
100gms dried Chickpeas
0.5 cup Pomegranate Seeds
10 French Beans
1 cup Broccoli florets
6-8 Walnuts
3 cups Lettuce leaves, loosely packed
5 tsp Olive Oil
1 tsp Mustard Powder
0.5 tsp Garlic Powder
0.25 cup Vinegar
0.25 cup Water
8 Dates
0.5 tsp Red chilli powder
0.5 tsp Smoked Paprika
0.5 tsp Cumin Powder
Salt to taste

Method:


1. Soak the chickpeas for 8-10 hours. Drain and boil in salted water until done.
2. Drain and peel the chickpeas. Dry as much as possible.
3. Toss with 1 tsp Olive oil and bake at 200 degree C for 25-30 minutes until crisp.
4. Remove from oven and toss with red chilli powder.
5. Peel and dice the sweet potato.
6. Toss in 2 tsp olive oil, smoked paprika, salt and cumin powder until all pieces are coated.
7. Bake for 35-40 minutes at 200 degree C until done.
8. Cook the quinoa as per instructions on the packet until done. I soaked the quinoa for 1 hour and pressure cooked with 1.5 cups of water.
9. Boil water and add a pinch of salt. Blanch the broccoli florets and beans for 2-3 minutes. Remove from hot water and immediately put the broccoli and beans in cold water.
10. Soak the dates in warm water. Drain the water, deseed the dates and blend into a puree. Use little water while blending if required.
11. Blend together mustard powder, vinegar, garlic powder, date puree, water and salt until mixed.
12. Make the salad by tossing the lettuce leaves, roasted sweet potato, chickpeas, quinoa, blanched broccoli, chopped blanched beans, walnuts, pomegranate seeds and the dressing together.
13. Serve at room temperature.

I love one bowl meals, so convenient. You spoon all that you want in one large bowl and then you mix together all the bits and pieces as you eat. Bowl meals are popular in so many cultures - Asians have bibimbaps and a variety of other bowl meals (I'm not sure what they are really called), there are Mexican Rice Bowls - I really really love this, I can never have enough of it. And I'm sure there are thousands more that I've never even heard of. What's your favorite bowl meal?

So while Summer hit its high notes, the weather had mercy and a few drops of rain in patches brought down the temperature a few degrees. Yay! Now I at least don't drag my feet to the kitchen. It was beginning to get so hot that I had almost wanted to give up cooking. Standing in front of a hot stove when the air around you is so hot, was definitely more unappetizing than take away food.

Being a food blogger, I cannot "not" cook food. What will I write about? Life of a food blogger, especially a part time one like me is not at all rosy. Full time office job that pays me a salary takes up all of my day and a good part of my evenings and nights. I'm either travelling or in meetings or on a call. It's not that I hate it, in fact I enjoy a lot of it, but all that leaves me with very little time for cooking. So most of my kitchen experiments or as I call it "Delicious Exotic Cooking" happens only on the weekends. Weekdays are for simple non spicy dinners like this Tendle Bibbe Upkari with chapati. 

Today was a relaxing Saturday. I had planned to not cook anything. Breakfast was at Gee's place where she made this awesome Sabudana Khichdi. And when Sabudana Khichdi is there, I always over-eat. So we were in no mood for a regular heavy lunch. Binged watched movies on TV all day. All that lazing is doing wonders for me!! I finally feel like cooking.

But today we were in no mood for regular heavy spicy weekend lunch. We both wanted something fresh yet filling. Not so sure if he wanted filling, but I definitely am not cooking any snacks with evening tea, so lunch had to keep us full till dinner. So presenting, my Saturday kitchen experiment, *drum rolls* - Grilled Cauliflower Summer Bowl!!

This Grilled Cauliflower Summer Bowl has 4 main components - the spicy grilled cauliflower ( of course), black rice (I told you I cook exotic food), mint coriander oil (ah! so easy) and a fresh summer salad (so refreshing). 

Start by making the mint coriander oil. It is the simplest part of the entire bowl, but also the thing that ties it all together. The mint and coriander need time to infuse into the oil. So I'd start with this. 

Then comes the black rice. Why black rice, you ask? Because I had it!! You can use brown rice or even regular white rice. I loved the play of black and the other colors, plus I had to use the rice, so I used the sexy black rice. Black rice is very similar to traditional brown rice, it needs quite a bit of soaking and it takes time to cook. It also has that bite to it that's generally missing in white rice. Cook the rice you have just the way you want it and it should be good. 

The Cauliflower - marinate it with olive oil, red chilli powder, cumin powder, garlic, lime juice, turmeric powder and salt. I love this marinade, and I use it for all sorts of things - Paneer, Tofu, Chickpeas etc. Let the marinade soak in, then grill the cauliflower until it is done. I did mine in the oven. 

The salad is just a basic salad of raw vegetables with a light dressing of lime juice, olive oil, salt and pepper. I just mixed together colorful peppers / capsicum to brighten up the whole dish. Use whatever you feel like adding to the salad.

Finally just spoon everything in a bowl and enjoy!! I preferred eating it at room temperature as it was a warm day. You can serve it at any temperature you like.

Grilled Cauliflower Summer Bowl

Ingredients:


For the Grilled Cauliflower:


2 cups Cauliflower Florets
1.5 Tbsp Olive Oil
1 tsp Red Chilli Powder
0.5 tsp Turmeric Powder
1.5 tsp Cumin Powder
1 tsp Garlic paste
1 tsp Lime Juice
Salt to taste

For the Summer Salad:


1 Cucumber
1 small Onion
1 large Tomato
1/2 cup diced Capsicum (mixed colors)
1.5 Tbsp Olive Oil
1 Tbsp Lime Juice
Salt to taste
Pepper to taste

For the Mint Coriander Oil:


2 tbsp finely chopped Coriander leaves
2 tbsp finely chopped Mint leaves
3-4 Tbsp Olive Oil
1/2 tsp Sugar
Salt to taste
Pepper to taste

For the Black Rice:


1 cup Black Rice
2 cups Water
1/2 tsp Salt

Method:


To make the Mint Coriander Oil: 


Mix together all the ingredients and keep aside until assembling.

To make the Black Rice: 


Wash and drain the black rice.
Add water until covered and soak for 1 hour.
Drain the water.
Pressure cook the rice with 2 cups of water and salt until done but not mushy. You can cook it in a deep pot as well. Black rice takes longer to cook just like brown rice.
Fluff the rice with a fork and keep aside.

To make the Grilled Cauliflower: 


Mix together all the ingredients except the cauliflower to make a marinade.
Add in the cauliflower and rub the marinade. Keep aside for half hour.
Lay out on a baking sheet and grill in the oven for 12-15 minutes until the cauliflower is done.

To make the Summer Salad: 


Roughly dice the cucumber, onion and tomato.
Add the lime juice, olive oil, salt and pepper. Mix well.

To Assemble the Summer Bowl: 


Spoon the rice equally into bowls. Pour the mint coriander oil over the rice.
Place the roasted cauliflower and the salad over the rice.
Serve at room temperature or warm.

Healthy Millet Salad

This Healthy Millet Salad is made from Foxtail Millet, kidney beans, sprouts and mix vegetables. It is very healthy, very tasty and very filling.

You go to the supermarket and are immediately drawn to the shelf that holds these exotic ingredients that you've only heard of but never eaten. It looks nice in it's classy looking packaging. You start remembering that recipe you saw on TV or that food photo that featured in the Magazine, wondering which of them should you cook. You glance at the price, and that wonderful dream of cooking with something exotic just evaporates. Smile replaced by shock. Deja vu, anyone?

I replay this scene everytime I go to stores like FoodHall or Godrej Nature's Basket. And sometimes I do it knowing that it will be an anti-climax. By now I know I will never buy Quinoa because of it's insane cost. Quinoa is being touted as THE superfood. High in protein, not high in calories, it's kind of  a win-win for those who can access it easily.

Quinoa is not Indian. Although, recently, some farmers are toying with the idea of growing Quinoa, it is still not popular enough to replace any of our ancient grains and seeds.

I use Millet instead. India has been the home of millet for centuries. Millets are just as rich as Quinoa. It is rich in fibre and magnesium. It has a low glycemic index and is a rich source of protein. And it is very light on your pocket. In short, millet is affordable super food that are easily available anywhere.

There are various types of Millet:

  • Pearl Millet or Bajra
  • Foxtail Millet or Navane
  • Finger Millet or Ragi
  • Sorghum Millet or Jowar
There are so many more, but these are the famous ones.

Let's  get back to this super tasty and healthy Foxtail Millet Salad. I've had it two days in a row and I just cannot have enough of it !!! 

This is a super simple salad. The dressing is made with just Olive oil, lime juice, honey, salt and pepper. Everything you already have at home, so there is no excuse to skip making it. Use any oil you like if you have run out of Olive Oil.

Now, usually, I say that there are things that are optional in a recipe. But in this one, the beans are definitely not optional. They are one the major building blocks of this salad. I really don't believe this salad will taste as good if you skip them. Also really needed are the fresh ingredients - tomatoes, cucumbers and mint. Everything else in the salad can either be skipped or replaced. You can substitute the coriander with parsley. Skip the sprouts if you don't have any. I personally like the light sweetness of the carrots in the salad and would recommend keeping it in there.

This salad was pretty filling due to all the protein in it and the slowly digesting millet. Hope you enjoy it as much as I did.

Healthy salad made with mixed vegetables, beans, sprouts and Foxtail Millet. 

Recipe Type:  Salad
Cuisine:            Indian
Prep Time:     30 minutes
Cook time:     30 minutes
Yield:                Serves 2

Ingredients:


1/4 cup Foxtail Millet or  Navane
1 cup cooked Red Kidney Beans or Rajma
1/4 cup Sprouts
2 ripe Tomatoes
1 small Cucumber
1/2 Carrot
1/2 Capsicum
Handful Coriander leaves
Handful Mint leaves
2 Tbsp Olive Oil
1 tsp Honey
2-3 tsp Lime Juice
Salt to taste
Pepper to taste
1/2 cup Water

Method:


Wash and soak the millet for 30 minutes.
Drain the millet and pressure cook it with 1/2 cup water until done. In a pressure cooker it takes around 1 whistle or 4-5 minutes after the pressure builds up.
If not using a pressure cooker, cook it the same way you would cook rice.
Allow the millet to cool to room temperature.
Finely chop the tomatoes, cucumber, carrot and capsicum and add to the millet.
Add the red kidney beans and the sprouts to the millet.
Roughly chop the coriander and mint leaves and add to the millet.
In a small bowl, mix olive oil, honey, lime juice, salt and pepper until completely blended.
Pour the dressing over the millet and vegetable mixture and mix well.
Serve at room temperature or chilled.

Sautekayi Kosambri | Cucumber Koshambari

Kosambri is a south Indian salad that is a must for any festival or function in Karnataka. I think our ancestors intended for us to eat healthy by mandating a salad amidst all that festival fanfare. It is usually The recipe posted below is of the version I have grown up eating . It was my favorite in the entire habbada oota (festival food) and if there were any leftovers, the whole family knew who could be counted on to finish it :D.  These days you get various types of kosambri. There is one with grated carrot that tastes nice and the latest I have seen is with American sweet corn. It is either made with split moong dal or split chana dal. Personally I have always preferred moong dal. So the recipe below is for cucumber and moong dal kosambri....








Sautekayi Kosambri | Cucumber Koshambari


A traditional South Indian salad consisting of lentils and cucumber

Recipe Type:  Salad
Cuisine:          South Indian
Prep Time:     2 Hours (includes lentil soaking time)
Cook time:     10 minutes
Yield:              3-4 servings

Ingredients:

½ cup Moong dal
1 Cucumber
1-2 Green Chillies
A handful Coriander
1 Tbsp desiccated fresh Coconut
2 tsp Oil
1 tsp Mustard seeds
5-6 Curry leaves
1 Tbsp Lime juice
Salt

Method:

  • Soak the moong dal in water for about 2-3 hours
  • Drain the water and keep the moong dal aside
  • Chop the cucumber finely and add to the moong dal
  • Add lime juice and salt as per taste
  • Heat oil in a small pan and add mustard seeds to it
  • After the mustard seeds splutter, add curry leaves and slit green chillies and pour this tempering on the kosambri
  • Add the desiccated coconut and finely chopped coriander leaves and mix well

Bean sprouts salad

Abroad, salads now form a part of every meal almost. People are getting conscious of their eating habits. For us in India, salad generally means kosambri/ Koshimbir, raita or cut veggies like carrot, tomato, cucumber etc. The same salad on daily basis gets boring. So I keep searching for different
types of salad recipes. On sunday, I was very excited to find bean sprouts in my veggie store. I think you can make this at home too, but I've never tried to get the sprouts to grow so thick. Anyway, it was very cheap and I remembered a yummy bean sprout salad I had in a restaurant buffet. Although I don't know their exact recipe, I decided to try something out. The try was successful, and gave us a tasty salad for dinner...



Ingredients:

Bean sprouts - 2 cups
Capsicum - 1/2 (Optional)
Coriander leaves - a handful
Baby spinach - a handful (Optional)
Sunflower seeds/ Peanuts/ Pinenuts - 2 tbsp (Optional)

For dressing:

Garlic - 1 clove
Olive oil - 1 tbsp
Dark soy sauce - 1 tsp
Lime juice - 2 tbsp
Honey - 2 tbsp
Sugar - 1 tsp
Onion powder - 1/2 tsp (Optional)
Pepper powder- 1 tsp
Celery salt (Can use regular salt, I used this as I had it)

Method:

Wash and drain the bean sprouts
Cut the capsicum into fine juliennes and add to bean sprouts
Finely chop the coriander and the baby spinach and add to the bean sprouts.
Roast the sunflower seeds in a pan for 1-2 minutes, until they turn a light brown and keep aside to be added later. You may use any nuts like peanuts, pinenuts, almonds or skip nuts altogether
For the dressing, heat the olive oil in a pan and fry finely chopped garlic in it until the garlic turns brown.
Pour out the oil into a bowl and add the dark soy sauce, lime juice, salt, sugar, honey, onion powder and pepper powder.
I used dark soy sauce because that was what I had. Any soy sauce can be used.
I used sugar along with the honey because the honey did not cut through the acidity of the dressing up to my liking. You can skip the sugar and increase the amount of honey or reduce the amount of lime juice. The dressing should have a mild sweet taste without being overpowering.
Mix the dressing well.
Spoon the dressing on the salad and add the sunflower seeds on top.

Kabuli chana chaat / Chickpea salad

Simple to make, yummy to eat. This street food regularly made with black kabuli chana, can be enjoyed with the white one as well.





Ingredients:

Chickpeas / Kabuli chana - 1/2 cup (dried)
Tomato - 1 large
Onion - 1 small
Coriander leaves - a handful
Flaxseed powder - 2 tbsp. (Optional)
Lime juice - 2 tbsp.
Red chilli powder - 1 tsp
Garam masala - 1/2 tsp
Chaat masala - 1 tsp
Black salt / Salt


Method:

Soak the chickpeas for 8-10 hours.
Cook them in the pressure cooker with 1 tsp of salt
Finely chop the tomato, onion and coriander
Add them to the cooled chickpeas
Add all the spices and lime juice

Kochhidu moolangi salad | Mooli salad | Radish salad

Crunchy, Peppery, Sharp - That's how I describe this Radish Salad made using both the root and the leaves.

What have you been upto this week? Me, I've been gardening a little.

Tomatoes are blooming, I see 2-3 juicy ones in the future. But today, was the day to harvest the Mooli (Daikon or Moolangi). I was surprised at how easy and low maintenance Mooli. Just throw in the seeds and stop worrying about them. Wait until they pop out of the ground, and they are ready to be harvested. Two lovely white moolis were peeking out of the soil in my pot. So harvest them, I did. 

Whatever I've grown in my little balcony garden, I've tried to celebrate those vegetables. Home grown vegetables are so fresh and tasty, they need to be celebrated. Hence, this healthy awesome crunchy salad that uses the root as well as the leaves. Waste nothing my friend. And this salad needs the leaves, it taste absolutely nothing like what it should without those peppery leaves. If you cannot find Mooli with the leaves attached to them, I suggest using any other peppery leaves like Arugula.

This is my Grandmother's recipe and one knows Grandmothers are rarely wrong when it comes to food. I've never been too fond of daikon or Moolangi (Mooli), but this Salad is one that I will never refuse. 

This Mooli Salad is not a salad that can be had for lunch or dinner on its own like Caesars salad. This is more like an accompaniment to a meal. Give me a plate of rice and dal and this salad makes an amazing side with its crunch and freshness.

Kochhidu Moolangi Salad | Mooli Salad | Radish Salad

Fresh salad made from finely chopped daikon radish or mooli and its leaves.

Ingredients:


2 Daikon Radish or Mooli or Moolangi
Daikon leaves or Mooli ke patte or Moolangi Soppu
2-3 dry Red Chilli
2 tsp Oil
1/2 tsp Mustard seeds
Salt to taste

Method:


Break off the leaves of the mooli and wash nicely
Chop the leaves finely
Peel the mooli and cut it finely.
Mix the leaves, mooli and salt.
Heat the oil and add mustard seeds.
Once they splutter, add the red chillies to the oil and fry for 30 seconds.
Add this tempering to the salad and mix well
