Hello friends, wishing you a very Happy New Year once again. Are you excited for what 2019 holds for you? Have you made resolutions yet?

I sure have. As every year before, I resolve to eat healthier, blog more and just spend contribute more time towards home. I would also love to reduce stress, and interact more with you on social media. I also want to go on more vacations and carve out some "me" time. A lot of resolutions and I hope can follow them through.

Now that we have our new year courtesies off the table, lets get on to the recipe - Vegan Laksa Soup.
The Laksa Soup is an uber-delicious Malaysian Noodle Soup. While there are different varieties of Laksa, this is the recipe for Curry Laksa or Laksa Lemak which is a spicy soup finished off with rich creamy coconut milk.  Which is perfect for this weather. Something weird is going on with the weather in Bangalore and we've had just about the coldest January in ages. Temperatures are dropping to 8-10 degree C and that's not really normal. So cozying up under a blanket and enjoying some delicious spicy soup is just perfect. I mean the weather calls for it!

My inspiration for recreating a Laksa at home came from the Laksa I ate at FoodHall in December. You have got to try theirs! It was so deliciously flavored, that I wanted more. When you want more and more of something, you have to make it at home, especially when they don't do a home delivery. So I looked up several recipes, and came up with mine. I mostly followed Adam Liaw's recipe, but kept it vegan.

The Laksa Soup has 3 main parts to it:
  • Laksa Curry Paste - The curry paste is what gives the soup its flavor. The Laksa I had was spicy and hence, I added enough chillies to give the same heat. This heat is eventually balanced by the sweetness and saltiness, but I'd say add just as many chillies as you can tolerate. The curry paste is simple to make, just blend all the ingredients together and you will get your smooth curry paste. If you don't have access to fresh lemongrass, use lemongrass paste or lemon zest (lots of it!). Candle nuts can be replaced with cashew nuts like I did. Use fresh turmeric if you have access to it, else use the ground powder like me. 
  • Laksa Soup - The soup I had was spicy, sweet, salty and sour (from the lemongrass).  It had the perfect balance of flavors (MasterChef judges would be proud of me!). To get the best flavor our of the soup, the laksa paste has to be fried until the oil separates or at least for 15-20 minutes. After that just add in broth or water to thin it. Add the thick coconut milk towards the end to get the creamy richness.
  • Toppings/Additions - Since it is a noodle soup, noodles are kind of mandatory. Use any noodles you have accessible. If you are not  purist, you may also use spaghetti. After this it is totally up to you to add whatever vegetable you want. I added blanched broccoli, capsicum, snow peas and mushrooms. I blanched my veggies instead of cooking them in the soup because I wanted my vegetables to retain their crunch and texture. Since I did not have Tofu Puffs, I added pan fried Tofu and it was delish!

Vegan Laksa Soup | Malaysian Laksa Lemak Recipe


Malaysian Laksa Lemak or Curry Laksa. The soup is spicy, sweet, salty and creamy.

Prep Time:     10 minutes
Cook time:     50 minutes
Total time:     60 minutes
Yield:                Serves 2

Ingredients:


For the Laksa Curry Paste:


6-8 Dry Red Chillies
2-3 Fresh Red Chillies
10-12 Cashew Nuts
3 Lemongrass Stalks (white part only)
1 small Onion
1 Tbsp Garlic
1 Tbsp Ginger
0.5 tsp Turmeric powder
1.5 Tbsp Coriander Seeds

For the Laksa Soup:


2-3 tsp Jaggery or Sugar
1 cup thick Coconut Milk
4 Tbsp Oil
Salt to taste
Water or Broth as required

For the Crispy Tofu


100 gms firm Tofu
2 tsp Corn Starch
Salt to taste
Pepper to taste
2 Tbsp Oil

To assemble the Laksa Soup


2 cups cooked Noodles
1 cup Broccoli Florets
8-10 Snow peas
0.5 Capsicum
5 Mushrooms
1 Tbsp chopped Coriander leaves

Method:


1. Soak the dry red chillies and cashew nuts in hot water and keep aside for 10 minutes. Then discard the water.
2. Blend together the soaked red chillies, cashew nuts along with all the other ingredients for the laksa curry paste along with a little water to a smooth paste.
3. Heat 4 Tbsp of Oil in a thick bottomed pan and add the curry paste.
4. Fry the paste for 15-20 minutes on low heat or until the oil separates.
5. Add 1 cup of water or broth and bring to a boil.
6. Add salt and sugar to taste.
7. Add in the coconut milk and simmer for 5-10 minutes.
8. Remove from heat and keep aside.
9. Boil water in a pan and add a pinch of salt.
10. Dab the Tofu with kitchen towel to extract as much water from it as possible.
11. Dice the Tofu into cubes and add to a large bowl.
12. Sprinkle the corn starch, salt and pepper to the bowl and toss until the tofu is coated with the corn starch.
13. Heat 2 Tbsp Oil in a frying pan and place the tofu in one layer. Flip the tofu until all sides are browned and crisp. Remove from heat until time to serve. Alternately, you can deep fry or bake the tofu.
14. Drop in the vegetables - broccoli, snow peas, diced capsicum and sliced mushrooms, one by one and blanch for few minutes until the vegetables are slightly soft.
15. To assemble the Laksa Soup, spoon the soup into a bowl, add the cooked noodles and the blanched vegetables. Top with crispy tofu and chopped coriander leaves before serving.

Soooo... I'm back with another breakfast recipe. Just in case you aren't convinced I LOVE breakfast. 

But before I get into the recipe, have you checked out my new "Recipes" page? Do you like it better than the text version I had before? Or do you think I should still include the text version?

This is what I spent my entire long weekend doing. Unlike some other blogging platforms, Blogger has no plugins, so every new thing I want to add or anything existing that I want to tweak, takes a lot of my time. Countless searches on Google and several tests and trials on the blog lead to the effect that I desire. While it may be much easier to move to a different blogging platform, I love doing the dirty work myself. I don't even realize how time flies when I sit editing my blog.

If you're a regular visitor, you've noticed, I've also been doing a lot of video recipes. If you like them, you can encourage me by subscribing to my YouTube Channel - One Teaspoon Of Life. Videos take up a lot of time and every encouragement I receive just pushes me to make them despite all the effort involved.

Since I wanted to spend most of my time working, I cooked some of the simplest meals this long weekend. This scrambled tofu with wilted spinach fit the bill perfectly.

I've been making these vegan and healthy scrambled Tofu for many years now, but the addition of spinach was recent. I love spinach as much as Popeye, but I usually make curries with it. Adding the spinach just makes the already healthy scramble even healthier and it tastes so delicious. It adds more fiber, more nutrients, more color, more everything to the dish!! 

The secret to making the best Scrambled Tofu, lies in... the salt. Yes, the salt!! Use regular salt and you will end up with a good Scrambled Tofu, use black salt and the Scrambled Tofu just goes from good to awesome. Black salt is a funky smelling salt that is made from salt rocks found in the Himalayan region. The salt adds an umami to the Scrambled Tofu, that takes it to another level. There are reviews that it makes the scrambled tofu taste similar to scrambled eggs. So you won't be missing your eggs if you just switched to a vegan diet. Use black salt in place of regular salt, or just use it in part along with regular salt. 

If you are on a plant based diet, you can skip the oil and saute the onions in water.

This scrambled tofu with spinach fits almost any diet. So you have no reason to skip making it. So go ahead, make it for weekend breakfast or brunch for your vegan friends.

Spinach Tofu Scramble Recipe | How to make Scrambled Tofu

Cook time:     15 minutes

Ingredients:


200gms Tofu
2 cups chopped Spinach
1 Onion
1 Tomato
1 finely chopped Green Chilli
2 Tbsp Oil
0.5 tsp Turmeric Powder
0.5 tsp Red Chilli Powder
2 Tbsp chopped Coriander Leaves
Black Salt or Salt to taste

Method:


1. Heat oil in a pan and add finely chopped onion.
2. Saute until the onions are slightly browned and then add the chopped green chilli.
3. Add in the chopped tomato and cook until soft.
4. Add the chopped spinach abd saute.
5. Add salt and cover and cook until the spinach is cooked.
6. Add the turmeric powder and red chilli powder and mix well.
7. Crumble the tofu and add it to the pan and mix well.
8. Cook on low heat for 3-5 mins.
9. Adjust seasoning if required.
10. Garnish with the chopped coriander leaves and serve it with toast.

Hey I'm back with my compilation of 10. And this time it is Curry!!

It is obvious that being Indian, I love my curry. There is nothing more comforting than a bowl of curry on a cold night. Curry can be made with poultry, seafood and meat or it can be made with simple vegetarian and vegan ingredients. Today I am listing down 10 of my favorite vegan Indian curries from the blog. Hope you enjoy it!!

1) Lahsuni Methi Mushroom [50 minutes]


A vegan curry made by simmering mushrooms in a fragrant garlic and fenugreek flavored masala gravy. This curry is unique in fragrance and flavor because of the slightly bitter methi leaves.



2) Mushroom Palak [60 minutes]


There had to be one curry in the list that was made purely of Spinach. While the Palak Paneer is the most popular spinach curry out there, this one uses Mushrooms instead of Paneer, making it vegan friendly and popular among mushroom lovers. The mushroom also adds loads of flavor to the curry.

3) Lauki Kofta [75 minutes]


Koftas are generally balls made of meat that are added to curries. However, here the koftas are made of bottle gourd. If you don't have bottle gourd, replace it with Zucchini which is the closest to it in texture.

4) South Indian Chana Masala [75 minutes]


My most pinned recipe - South Indian Chana Masala. There are 2 versions of the popular Chana Masala made with boiled chickpeas - the North Indian one that is made with tomatoes and is more easily available in restaurants all over the world and the South Indian one that is made with coconut and is only available in South India.

5) Punjabi Dum Aloo [75 minutes]


Punjabi Dum Aloo is rich, creamy yet vegan curry in which baby potatoes are simmered in a delicately spiced tomato based gravy.

6) Babycorn Masala [60 minutes]


Baby Corn Masala is a semi dry curry made by tossing stir fried Baby Corn in a North Indian style tomato masala gravy. Easy and very quick to make, this will be ready in less than an hour.

7) Bom Chount Wangan [55 minutes]


A unique Kashmiri curry made with green apples and brinjal or eggplant. Sweet and spicy, this curry is unique in it's flavors.

8) Coorg Pumpkin Curry [70 minutes]


This curry from the beautiful region of Coorg in South India. And like all South Indian curries, this one has a coconut base. This curry is a mix of sweet, salty and spicy flavors.

Mildly spiced vegetable stew made by cooking colorful peppers, cauliflower, carrots and beans in coconut milk.


10) Vegetable Jalfrezi [60 minutes]


Jalfrezi is a popular curry made with tomatoes and a mix of vegetables. You can add Paneer to the curry if you are making a non-vegan version. For vegans, add some fried tofu to take it to another level.

Chilli Tofu [Video Recipe]

Has the football fever caught up with you? I know I'm reeling with it. How exciting was last night's match, the match swung the Portugal side and then the Spain side and unfortunately ended up a draw. An exciting match always demands exciting food to accompany it. And this Chilli Tofu is definitely as exciting as it gets. Batter coated Tofu fried crispy and added to a sweet, sour and spicy sauce influenced by Chinese flavors along with some green Capsicums or peppers.

In my last post, I showed you How to make Tofu at home!! And I made this Chilli Tofu following that exact recipe for Tofu.

Firstly, how do you like your Tofu? I personally LOVE fried Tofu. The first time I ate  tofu, I disliked it. But when I had it fried I was so hooked on. I now eat it in any form with relish. This Chilli tofu will convert any Tofu hater. Tofu is dipped in a simple batter made from corn flour or corn starch, ginger-garlic paste and red chilli powder or paprika. Pan fry the dipped Tofu. You can also deep fry it, but you know how I steer away from deep frying anything, so pan fried it was for me. 

The sauce is an extremely easy sauce. It is heavily influenced by Chinese flavors. It starts with sauteeing onions, garlic and green capsicum. In goes Soy Sauce and Sriracha Sauce. I like the tang and heat that Sriracha sauce brings in. If you don't have Sriracha Sauce, just use regular chilli sauce or tomato ketchup and increase the amount of red chilli powder you add. Thicken the sauce with cornflour and mix in the fried tofu. 

Who says Vegan food has to be boring? Serve this to all those who think so!! 

You can make this with Paneer if you want a vegetarian option following the same recipe.

Chilli Tofu

Cuisine:            Asian
Prep Time:     10 minutes
Cook time:     30 minutes
Total time:     40 minutes
Yield:                Serves 2-3



Ingredients:


For the battered fried Tofu:


200 gms firm Tofu
3 Tbsp Corn Starch / Corn Flour
1 Tbsp All Purpose Flour (Maida)
1.5 tsp Ginger-Garlic Paste
1 tsp Red Chilli Powder or Paprika
Salt to taste
Water as required

For the gravy:


2 Tbsp Sriracha Sauce or Tomato Ketchup
2 tsp Red Chilli Powder
1 Capsicum
3-4 Tbsp Oil
Salt to taste
1.5 cups Water
1 finely chopped Onion


Method:


To make the battered fried Tofu:


1. Take the cornflour in a large bowl.
2. Add in flour, 1.5 tsp ginger garlic paste and 1 tsp red chilli powder.
3. Add half cup of water and mix well to form a thin batter. Add salt to taste.
4. Dice the tofu into bite sized pieces.
5. Dip the tofu in the batter until each piece is fully coated.
6. Heat 3 Tbsp Oil in a pan.
7. Once the oil is hot, add the tofu.
8. Flip the tofu when it browns on one side. When all the sides of the tofu are brown, remove from oil and keep aside.
9. If you are using a small pan, you can fry the tofu in batches.
10. Remove from pan and keep aside.

To make the gravy:


1. In the same pan that we fried the tofu, there will still be some oil left. Add finely chopped onion to it and fry until translucent.
2. Add ginger-garlic paste and fry until fragrant.
3. Add diced capsicum and saute for 2-3 minutes.
4. Add the soy sauce and sriracha sauce. Mix well.
5. Add 0.5 red chilli powder.
6. Add 0.25 cup water and boil for 2-3 minutes.
7. Add salt to taste.
8. Add the remaining batter used for dipping the tofu. Add it by the spoonfuls as the corn flour will instantly thicken the gravy.
9. If the gravy is thick, add more water, if it is thin, add 0.5 tsp cornflour mixed with 1 Tbsp water.
10. Boil the gravy for 3-4 minutes.
11. Add the fried Tofu and mix well.
12. Simmer for 2 minutes and serve hot.
13. This can be enjoyed as an appetizer or served as a side with fried rice or noodles.

For a long long time Tofu ruled over all the vegan cuisine. You just had to say vegan and tofu would magically appear on your plate. Today, with so many more options like tempeh, seitan and mock meats that are readily available, tofu's dominance may have reduced a little. But for me, Tofu will always rule. I've tried the others and unfortunately my adventurous palate did not find a liking to them.

Last week I shared a recipe on How to make Soy Milk from dried Soya Beans aka from scratch. I got an overwhelming response to that post, Thank you guys!! So this week I am taking it one step forward from there - Making Tofu at home from Soy Milk.  Making Soy milk wasn't difficult, making Tofu is even easier!!


FIRST, you need warm Soy Milk. Make your own or buy it from the store. Fresh soy milk will curdle easier than store bought as it has no stabilizers. But I'm sure you can work with the store bought one too, only, you may need a little more acid to get it to work.

SECOND, we will now curdle the milk. Traditionally Nigari or Magnesium Chloride is used to curdle the milk. While this gives a better texture, it is not something that is readily available to me. So I used the next best coagulant which works perfectly when I make paneer - Lime juice. The coagulant is mixed with water and added to the warm Soy milk and stirred until the milk curdles or splits. You should continue to stir until you see the milk solids. Then just cover and rest for a while until the coagulant does its magic.

THIRD, straining the curds. Use a clean cotton cloth like a muslin cloth. Strain out all the liquid and tie the curds up in the cloth.

FOURTH, pressing the Tofu. If you are a regular tofu maker, buy a Tofu Press. Or you can follow my video for a DIY way to make tofu press with readily available plates and boxes at home.

Tofu is READY!!

Tofu made with lime juice is slightly more crumbly than the one made with nigari. It is also firmer and not silken. You can scramble this tofu, bake this tofu or fry this tofu. While the other two are healthier, my personal favorite has always been fried Tofu. What is you favorite way to eat tofu? Leave me a comment.

How to make Tofu | Making tofu without Nigari | Soya Paneer Recipe

Cuisine:            Asian
Prep Time:     5 minutes
Cook time:     45 minutes
Total time:     50 minutes
Yield:                250 gms

Ingredients:


1 litre Soy Milk
4 Tbsp Lime Juice
1 cup Water

Method:


1. Heat the soy milk in a pot until bubbles appear.
2. Mix the lime juice in the water.
3. Add half of the lime juice water and stir in a figure of 8 for 8-10 times.
4. Remove from heat and add the remaining lime juice water and continue to stir in figure of 8 until the milk curdles and you can see the milk solids.
5. Cover and rest for 15 minutes.
6. Strain using a clean muslin cloth.
7. Place in a tofu press and add weight. Keep it pressed for 15-20 minutes.
8. If you don't have a tofu press, you can make it yourself at home as shown in the video.
