Paneer Tikka Recipe | How to make Paneer Tikka [Video]


Paneer Tikka Recipe with step by step photo and video instructions. Paneer Tikka is a popular North Indian appetizer made by marinating cubes of paneer and fresh vegetables in yogurt and spices and then grilling them either in the oven or on a pan. Paneer Tikka


Sitting on a sea-facing table on a shack and eating Paneer Tikka on a skewer along with a cold drink while listening to the waves crashing against the shore and the sun all orange and ready to set. The ideal setting in my head, something absolutely impossible at the moment. But when I can be transported to my favorite places in my head, hell, why not!

Food does transport you to places, doesn't it? And to me, the setting of a seaside while I eat these hot spicy yet soft paneer tikkas with that zingy green sauce seemed so much more enticing than being cooped up in front of the TV. Oh yeah, that sauce is Z-I-N-G-Y right up to the last Y. And that's a sauce that I use with everything. And while that is not the traditional sauce for Tandoori dishes, it goes perfectly well, as per me.


What is Paneer Tikka?


Paneer Tikka is a very very popular appetizer, entree, starter from North India. Big pieces of soft paneer are marinated in hung curd (yogurt), besan (chickpea flour), and a lot of different spices along with some quick cooking veggies like capsicum, tomatoes and onions. This is then skewered and traditionally cooked in a Tandoor. Let the Tandoor not stop you from making Paneer Tikka. Use the grill mode in your oven, or the barbeque, or just the simplest - a pan on the stove to grill these babies.

Paneer Tikka tastes heavenly when it has that slight char, so go for it.

To make the tastiest Paneer Tikka, buy the best Paneer you can get. Normally I would suggest making it from scratch, but I've never found homemade Paneer works best for this as it is slightly more crumbly than required. Buy the softest and freshest Paneer you have available, maybe malai paneer.

What all Spices are we using?


While we use a lot of spices in Paneer Tikka, it is actually not "hot" on the palate. The spices just add flavor without adding any real chilli heat. Today we are using the following spices to flavor our Paneer Tikka:

Coriander Powder
Cumin Powder
Red Chilli Powder
Turmeric Powder
Garam Masala
Chaat Masala
Amchur (dried mango powder)
Kasuri Methi (dried fenugreek leaves)
Black Pepper
Ajwain or Carom seeds

I know, it is a big list, but most Indian households have this readily available in their pantry. But if you don't you can just go ahead and buy Tandoori Masala. Oh yeah, there is a shortcut and it tastes equally good. Tandoori Chicken Masala is readily available in all famous Indian brands, and it does not contain Chicken. It is a vegetarian masala and it is being marketed to cook chicken, but it tastes equally good with vegetarian dishes like Paneer Tikka or Tandoori Gobi. 

We also specifically used Mustard oil as it adds that kick of pungency. Use any neutral oil if you don't have access to it.

That Zingy Sauce/ Chutney


Usually Paneer Tikka is served with a light green yogurt based chutney that tastes amazing. Really! I can actually eat bowlfuls of that chutney. But I usually make this green chutney/sauce for most of my appetizers. It is made of just 4-5 ingredients - fresh Coriander leaves, fresh Mint leaves, fresh Green Chillies, and lime juice. Blend them together with salt and water and you have a sour, salty, fresh sauce that can wake you up in a jiffy. I sometimes add a clove of garlic too. You can also add a teensy spoon of sugar to balance the chutney.

Paneer Tikka Recipe

Cook time:     30 minutes
Total time:     2 hours 30 minutes
Yield:                Serves 5-6

Ingredients:


400gms Paneer
1 Capsicum
2 Tomatoes
1 Onion
Oil to grill

For the marinade:


2 cups Hung Curd
3 Tbsp Chickpea Flour (Besan)
1 Tbsp Coriander Powder
1 Tbsp Cumin Powder
0.5 Tbsp Turmeric Powder
1 Tbsp Red Chilli Powder
0.5 Tbsp Garam Masala
1 tsp crushed Black Pepper
0.5 tsp Carom seeds (Ajwain)
0.5 Tbsp Chaat Masala
1 tsp dried Mango Powder (Amchur)
1 Tbsp Kasuri Methi
1-2 Tbsp Lime juice
2 Tbsp Mustard Oil
1.5 Tbsp Ginger Garlic Paste
Salt to taste

Method:


1. Cut the Paneer into 1" cubes. Deseed the tomatoes and capsicum and cut into 1" sized pieces. Peel the onion and separate the layers and cut into 1" sized pieces.
2. In a large bowl, add add the ingredients for the marinade and mix well. Taste and adjust salt or spice as required.
3. Add in the cubed paneer, capsicum, tomato and onion and mix well until they are completely coated with the marinade.
4. Cover and allow to rest for 1 to 2 hours.
5. If using bamboo skewers, keep them soaked in water while the paneer marinates.
6. After 1-2 hours, skewer the paneer and vegetables onto a skewer.
7. Heat oil in a non stick pan and place the skewers. Cook in batches if required. The paneer tikka can be cooked in the oven in the grill mode or on a barbeque too.
8. Turn the skewer after the first side cooks. Do the same for the remaining sides.
9. Once all sides are cooked, remove from heat.
10. Serve the paneer tikka hot with coriander mint chutney.

Moonglet Recipe | Moong Dal Pizza Recipe [Video]

You guys, you have got to try this fluffy pancake meets Pizza aka Moonglet. It is light, flavorful and so customizable. It is also gluten-free and can be adapted to suit a plant-based / vegan diet and the Jain diet. So easy too.

I saw this on YouTube and I knew instantly that I had to try it. The idea of a gluten-free pizza made with all natural ingredients was too tempting to resist.

I loved the crispy outside. I love the soft and fluffy inside. And I love the toppings. I've topped the Moonglets with so many different toppings - capsicum, tomato, baby corn, onion, paneer, tofu, etc. It is really your choice. I also found topping the Moonglet with pizza seasoning made it even more yum. You can either go the Italian way like I did and top with oregano, garlic powder, etc. or try a fajita seasoning. It's all in your hands.

Making the batter needs a little bit of patience, this is not an instant recipe. The moong dal or deskinned split mung beans need soaking. If you are short of time, soak for just 2 hours and if you have the time, you can soak it overnight. I just would not exceed 10 hours. Then just grind the moong dal along with ginger and green chilies to make a smooth batter. The dal itself will be moist and you may not require any extra water. Grind it as thick as possible, we can add water later while making the Moonglet. The Moonglet gets its fluffiness from Eno fruit salt, if you don't have Eno, use baking soda and a teaspoon of lime juice to help it get the rise. It may not be as fluffy as with Eno, but it will still be light. I have found adding a little water along with the Eno, helps it fluff up better.

Now how many Moonglets you make is all up to the size of your pan. I prefer making several small ones instead of one large one. It makes it much easier to flip them. I suggest using the smallest frying pan you have to make them and dividing the batter accordingly. Grease the pan and add the batter. Top with whatever you choose and use the back of the spatula to press the toppings in.  Once the first side cooks, flip and cook the other side and top with cheese before serving.

This was my easy version of the Moonglet. YouTube is awash with several versions, some even go the cheese burst way where the Moonglet is cut open carefully and cheese is put inside along with the topping and allowed to melt. I would love to try that out someday.

Always, always serve the Moonglet hot. You can serve it with sauce or chutney or even salsa, something to just dip the Moonglet it.


Suggestions to suit other diets:


  • To adapt the recipe to a vegan / plant-based diet, use only vegetables or use tofu for the topping. You can either skip the cheese or use vegan cheese.
  • To adapt the recipe to a Jain diet, skip the ginger in the batter. You can replace it with asafoetida or hing.

Moonglet Recipe | Moong Dal Pizza Recipe

This recipe can be adapted to suit a vegan diet and a Jain diet.

Prep Time:     5 hours
Cook time:     30 minutes
Total time:     5 Hours 30 Minutes (includes soaking time)
Yield:                3 to 4


Ingredients:


1 cup Moong Dal
2 Green Chillies
1 tsp Ginger, grated
1 tsp Eno fruit salt
1 tsp Pizza seasoning
Sliced vegetables for topping
Sliced paneer for topping
2 tbsp Coriander leaves, chopped
3-4 Tbsp Cheese, grated
3-4 Tbsp Oil
Salt to taste
Water as required

Method:


1. Wash the moong dal and soak it for 5 hours.
2. Drain the moong dal and grind it along with ginger and green chillies and 1 Tbsp of water until smooth. The batter has to be thick, so don't add too much water.
3. Add salt as per taste and the eno to the batter.
4. Add water if required and mix well until the eno is combined and the batter is fluffy.
5. Heat oil in a small non stick pan and add spoonfuls of the batter. Divide the batter depending on the size of your pan. I made 2 moonglets with a 6" frying pan.
6. Keep the pan on low heat and arrange the toppings. I used sliced capsicum, tomato and paneer.
7. Top with chopped coriander leaves and pizza seasoning.
8. Gently press the toppings into the moonglet with the back of a spatula.
9. Cover and cook on low heat for 6-8 minutes or until one side is cooked.
10. Gently flip the moonglet and spoon oil on the sides.
11. Remove from heat once the second side is cooked too.
12. Top with grated cheese.
13. Cut into slices and serve.

We had this absolutely amazing cookout event in office organized by Slurp Studio where they had grilled Paneer, caramelized onions, sauted mushrooms, fresh tomato slices and many more mouth watering ingredients along with a variety of breads and spreads. We had to build our own sandwich and I tried this Grilled Paneer Sandwich that left me obsessed with it even after the day was over.

I had to HAD to have it again. I mentioned it to my sister Gee who got super excited. More than me I think to have this sandwich, it's funny, she did not even have it the first time. But then, that's her. She's totally obsessed with sandwiches. She hacks into my Pinterest account searching for mouth watering juicy sandwiches. I think she's trying to find the ultimate vegetarian Moist Maker just like Monica Geller's.

Building a sandwich is so much about the perfect bread than about the filling I feel. I'm sooo into Artisan breads. That hard crust and soft crumb makes my mouth water. I could probably eat warm Artisan bread with some extra virgin olive oil, salt and pepper all day long. And I really NEEDED an artisan bread loaf to recreate the Sandwich of my dreams. Yes! that's what I shall call it, Sandwich of my Dreams!!!

Now Bangalore's a big city where you get pretty much anything but you don't get it everywhere. So my hunt for Artisan bread took me to many famous bakery in South Bangalore, but I was sorely disappointed by the results.

Finally, I took to online shopping. I found this amazing looking herb crusted artisan bread, and I ordered it ASAP. Imagine my disappointment when it came pre-sliced like a regular bread loaf. I had imagined this Sub and I got teeny tiny slices. I immediately returned it. Luckily for me Gee was gracious enough to go all the way to the center of the city to get me this beautiful looking German Rye Bread. Two Thumps UP!!!

Bread sorted out, now let's get on to my Grilled Paneer. This super easy grilled paneer is marinated in a very simple marinade made of ingredients found in your pantry - Oil, Paprika or Red Chilli Powder, Garlic Paste, Cumin powder and salt. Marinate the paneer for 30 mins to 1 hour. I grilled the paneer on a grill pan to get that beautiful char lines, but you can grill it in the oven or a greased pan as well. A coal barbeque is actually the best way to cook it, as it will add that wonderful smokey flavor. The paneer really doesn't need to be cooked for any particular amount of time. The cooking is only to soften it on the inside and char it on the outside.

You can replace the Paneer with Haloumi or Tofu (for a vegan version). It needs to be a hard cheese that won't melt when grilled at high heat.

I also made my own Tartar sauce. It is super simple, just chop and add. If you don't have the ingredients, you can just use Vegetarian Mayo.  You can also use add some mint puree to regular mayo to get mint mayo. Mint mayo goes really well with this sandwich.

Lastly the fresh ingredients, I kept it simple with just lettuce, you can add sliced tomatoes and onions.

The instructions for building the sandwich are as per what I made. Take them as just general guideline and feel free to adapt it to your style of sandwich making.

Ingredients:


For Grilled Paneer:


400gms fresh Paneer
1.5 Tbsp Extra Virgin Olive Oil
1.5 tsp Garlic Paste
1 tsp Red Chilli Powder
0.5 tsp Cumin Powder
Salt to taste

For Home-made Tartar Sauce:


1 cup vegetarian Mayonnaise
1 Tbsp chopped Dill Pickle
1 tsp Lime juice
1 tsp finely chopped Dill leaves
Salt to taste
Pepper to taste

For the Sandwich:


2 loaves Rye Bread (or any Artisan Bread loaf)
Grilled Paneer
Tartar Sauce
Lettuce leaves

Method:


For Grilled Paneer:


Mix together the extra virgin olive oil, garlic paste, red chilli powder, cumin powder and salt to make a marinade.
Slice the paneer into slabs, about 0.8-1 cm thick.
Marinate the paneer. Cover and keep aside for at least 30 minutes.
Heat up a grill pan or on a barbeque grill, grill the paneer for 1-2 minutes on each side until char marks appear.

For Home-made Tartar Sauce:


Mix together all the ingredients to make a simple tartar sauce.
Adjust lime, salt or pepper according to your taste.

For the Sandwich:


Halve the bread lengthwise.
Layer the lower half of the bread with lettuce.
Place the grilled paneer slab on it.
Spread the tartar sauce on the paneer.
Cover with the other bread slice to make the Grilled Paneer Sandwich.

Instant Paneer Tikka (Vegan Option Available)


I absolutely LOVE these Instant Paneer Tikkas. Just what I needed to brighten up a really boring week.

I've been bored to death this week. A continuing bus strike meant me not going to office. I had to work from home. Alone!! So boring. I miss talking to people. All alone at home means I talk to myself or my TV talks to me. Not so entertaining, really.

I love meeting up my friends at work in the morning over an extended tea break and chatting away. We talk about everything, from real serious technical stuff to light hearted sitcoms. I miss these "Tea Sessions", as we call it, the most. It's my best part of the day in office. There are times I go to office early just so as to reach in time for Tea.

So as I prepared myself for yet another ALONE Tea Session (Sigh), I decided to add some spice into it with something so tasty that I forget I am alone.

When I am dull or bored, I cook. Cooking wakes me up like nothing else can. And especially trying something new is always so much more exciting. I looked through my fridge and I had - Capsicum and Paneer and some Cherry Tomatoes. An idea formed. Voila - Instant Paneer Tikkas.

These Paneer Tikkas need no overnight marination or complicated setup. They took hardly 30 minutes from start to finish. Now that's INSTANT in my dictionary.

I used what I had in my fridge - Capsicum, Tomato and Paneer. You can use anything with the Paneer. The usual combinations are Capsicum, Onion or Tomato. But you can get creative and may be pop in a mushroom or a thick slice of Zucchini.

I liked the idea of individual sized portions, hence I used toothpicks. You can use real skewers to pile on all your favorite things on it. For it to be as Instant as mine, use quick cooking ingredients only, If you want to skewer on Potato or Corn, you may probably want to parboil them first. that makes it a little less instant-ty, but definitely not any less tasty.

For the marination, use thick yogurt or curd, I tend to always have at least a bowl of homemade yogurt in the fridge, so no worries there for me. If the curd or yogurt you have is thin, then place it in a tea strainer or a muslin cloth for around half hour to let the whey drain off and you will have nice thick curd. I've used a bunch of spice powders to made the marinade. If you want it to be even more instant, use store bought Tandoori Masala and it will taste just as good.

Paneer Tikka is always grilled. I grilled mine in the oven. But if you do not have any means of grilling it, then you can shallow fry them. Just don't cook it for very long, they will lose that silky smooth texture of the paneer.

If you are a Vegan, you can replace the Paneer with Tofu and the yogurt with some Lime juice.

1 Cherry Tomato per Tikka (Optional)
3/4-1 tsp Oil per Paneer Tikka

For the Marinade:


2 Tbsp thick Yogurt or Curd (use 1-2 tsp lime juice for a vegan option)
1.5 tsp Ginger Garlic Paste
1.5 Tbsp Besan or Gram Flour
1/4 tsp Cumin powder
1/2 tsp Coriander powder
1/2 tsp Red Chilli Powder
1/4 tsp Garam Masala
1/4 tsp Amchur or Dried Mango Powder (Skip if using lime juice or if the yogurt is very sour)
1/4 tsp Chaat Masala (Optional)
A pinch of Hing or Asafoetida
Salt to taste

Method:


Mix together all the ingredients for the marinade.
Cut the Paneer into individual bite sized cubes. Cut the Capsicum to the same size as the Paneer.
Add the paneer and capsicum to the marinade and mix well.
Skewer the capsicum, paneer and the cherry tomato onto the toothpick.
Place them in a greased grilling sheet or pan.
Spoon a little oil over each of the Paneer Tikkas.
Grill them for 10-15 minutes, turning them every 3-4 minutes.
They are ready when they char slightly.
Serve hot with some mint chutney.

I saw this lovely photo of Jalfrezi in a magazine, it had me salivating. That one photo was my inspiration to try my hand at Jalfrezi. Jalfrezi has made its presence felt worldwide. It was voted to be UK’s most popular Indian curry a few years ago. And who would believe making it was so easy. 

The only effort needed is actually in cutting the vegetables, but you can totally skip it by buying already cut veggies from the supermarket or using your food processor. And you can relax doing your crossword or watching your favorite show on TV, while it simmers slowly. All it needs is like a check around 5-10 mins. Open the pan, peek, stir, close and back to what ever you were doing. Lovely, isn't it?

The best part is, you can add any vegetables you fancy or use up all your leftover vegetables at the end of the week to make it. I would however recommend adding baby corn as I felt it gives it an added crunch. To make it vegan, replace the paneer with Tofu or totally skip it, you won't be missing out on anything.

Vegetable Jalfrezi


mix vegetable gravy paneer jalfrezi indianVegetable Jalfrezi is a popular Indian mix vegetable curry with a tomato based gravy. Vegetable Jalfrezi is gluten free and vegetarian. It can be made vegan by either skipping the Paneer or swapping it out for Tofu.

Ingredients:


1 large Onion
3 Tomatoes
0.5 cup Cauliflower florets
0.5 cup Broccoli florets
1 Carrot
8-10 Green Beans
8-10 Baby corn
0.5 Capsicum (or a mix of colored Capsicums/Peppers)
2 Tbsp chopped Coriander leaves
50 gms Paneer or Tofu
1 Tbsp Ginger Garlic Paste
2 Tbsp Tomato Ketchup
1.5 cups Water
3 Tbsp + 2 tsp Vegetable Oil
0.5 tsp Turmeric Powder (Haldi)
1 tsp Kitchen King Masala or Garam Masala
1 tsp Red Chilli Powder
1 tsp Sugar or Jaggery (Optional but recommended)
1 tsp Cumin seeds (Jeera)
Salt to taste

Method:


1. Heat 2 tsp oil in a kadhai. Cut the paneer into batons and fry them lightly until golden brown on all sides. Remove from heat and keep aside.
2. Add the remaining oil to the kadhai and add the cumin seeds.
3. Add the finely chopped onions and saute until golden brown.
4. Add in the ginger garlic paste and saute until fragrant.
5. Puree the tomatoes and add in the kadhai.
6. Cook on medium heat for 8-10 minutes or until the oil separates.
7. Add in the ketchup and mix well.
8. Now the vegetables like cauliflower, carrot and beans which take a little longer to cook. 
9. Add water.
10. Cook on medium heat until the vegetables are almost done.
11. Now add the remaining vegetables like baby corn, broccoli, capsicum.
12. Add the turmeric powder, kitchen king masala, red chilli powder and salt.
13. Cook until the vegetables are done and the curry has the desired consistency. If it is too thin, you can cook it a little longer.
14. Add the paneer to the gravy.
15. Add sugar/jaggery to suit your taste.
16. Garnish with coriander leaves and serve hot with rotis or rice.


Step by Step Recipe with Photos:

1) Cut all vegetables except the onion and tomato into baton sized pieces. Cut the paneer /tofu similarly Chop the onion finely. Puree the tomato.

2) Heat oil in a large pan and add the cumin seeds.

3) Once they brown slightly, add the onions and saute until they are translucent. Add the ginger garlic paste and mix well.

4) Add the tomato puree.

5) Add ketchup.

6)  Cook on low heat until the oil separates. Approximately 8-10 minutes.

7) Now the vegetables like cauliflower, carrot and beans which take a little longer to cook.

8) Add water. Cook on medium high heat until the vegetables are almost done.

9) Now add the remaining vegetables like baby corn, broccoli, capsicum.
Add the turmeric powder, kitchen king masala, red chilli powder and salt.
Cook until the vegetables are done and the curry has the desired consistency. If it is too thin, you can cook it a little longer.

10) In the meanwhile, heat 1 tsp of oil in a non stick pan. When the oil is hot, add the paneer / tofu.

11) Fry until the paneer is slightly brown.

12) Add the paneer to the gravy. Add sugar/jaggery to suit your taste.


13) Garnish with coriander leaves and serve.
