I love Mushrooms. It is the meat for vegetarians with loads of umami in it. There is seriously no other veggie that provides that elusive 5th taste that our beloved MasterChef Australia judges talk about.

What is Kadhai Mushroom?


Kadhai is literal terms is an Indian wok or the little vessel you see in my photos. That is a kadhai. So Kadhai Mushroom just translates literally to mushroom cooked in a wok. But as a dish, it is so much more than just that.

Kadhai Mushroom is a spicy melee of mushrooms, capsicum and onions simmered in a freshly ground masala that is so fragrant and a bit of tomato puree for that tartness and body for the curry.

This is probably one of the only curries where I don't substitute the masala with my Garam Masala. It just doesn't taste the same. The fresh masala adds so much flavor that it is almost a sin to substitute it with any store bough mixed spice powder. So I highly recommend making your own spice blend, just for this, and maybe then using it for myriad other curries. 

Kadhai Mushroom can either be a dry or a semi dry curry or it can be a curry with gravy. Every restaurant serves it differently and so can you.

The details...


Kadhai Mushroom is probably one of the easiest curries to make. To make Kadhai Mushroom, toast the whole spices - coriander seeds, cumin seeds, green cardamom, black cardamom, bay leaf, cloves and pepper. Toasting on low heat makes the spices release their oils and makes them more fragrant. Toast the dry red chillies, if using. This can be substituted with red chilli powder or with paprika without affecting the flavor and there is no need to toast it either. Once everything has cooled, make a quick powder.

Next, saute the mushrooms and keep them aside until later. If you don't have the time to do this, just toss them into the curry later and allow them to cook in the masala.

The onions and capsicum are cut into large chunks. This is meant to be a chunky curry. They are sauteed along with ginger garlic paste until they are cooked slightly. Do not overcook the capsicum, it is meant to retain the crunchiness.

Then the tomato puree, turmeric, salt and masala is added along with desired amount of water and the curry is simmered for a few minutes. The mushrooms are added at the end and given a quick stir.

The kasuri methi or dried fenugreek leaves provide an additional salty bitter fragrance that goes superbly with the curry.

Kadhai Mushroom can be served as a side with roti or naan bread or even with rice.

Kadhai Mushroom Recipe

Cuisine:            North Indian
Prep Time:     10 minutes
Cook time:     30 minutes
Total time:     40 minutes
Yield:                Serves 2


Ingredients:


200gms Mushrooms
1 Capsicum
1 Onion
1 cup Tomato Puree
1 Tbsp crushed Ginger-Garlic
1 Tbsp Coriander Seeds
1 tsp Cumin seeds
3-4 dry Red Chillies or 1-2 tsp Red Chilli Powder
0.5 tsp Black Pepper
2 Green Cardamom
2 Cloves
1 Black Cardamom
2 Bay leaves
0.5 tsp Turmeric Powder
1 Tbsp Kasuri Methi
4 Tbsp Oil
Salt to taste
Water as required

Method:


1. In a kadhai or pan, dry roast the coriander seeds, cumin seeds, green cardamom, black cardamom, 1 bay leaf, cloves, dry red chillies and black pepper for 1-2 minutes until fragrant. Remove from heat and allow to cool. Once cool, grind to a fine powder.
2. Cut the onions into petals and chop the capsicum into large chunks. Halve the mushrooms.
3. In the same kadhai heat 1-2 Tbsp oil and saute the halved mushrooms until cooked. Remove from heat and keep aside.
4. Add the remaining oil and add the onions, crushed ginger garlic and 1 bay leaf and saute until the onions are slightly soft.
5. Add the capsicum and fry until the capsicum is slightly browned.
6. Add the tomato puree, turmeric powder, ground masala, red chilli powder if using, salt and saute on low heat for 2-3 minutes.
7. Add water as desired, and simmer for 4-5 minutes on medium heat.
8. Add the mushroom and mix well.
9. Top with kasuri methi and mix well.
10. Serve hot with roti and rice.

Life sure does look different today than it looked a month ago. And apart from overworking myself to the ground, constantly checking Twitter and panicking about not having enough food supplies to last me a few weeks, I have been cooking even more, well, just to keep me occupied. I'm also learning to be more frugal where I was liberal before and trying to make my limited supplies last longer.

While this situation did not give rise to this Pyaz Besan Paratha, it somehow feels apt to post it now.

I first came across the idea of making this paratha through a TV show where the chef made the stuffing with just the gram flour or chickpea flour or besan, lime juice, sugar and salt. I loved the idea and tried to replicate it. But being a spice lover, I just added in quite a few spice powders for flavor. Oh, yeah, I also have onions for texture, and well the slight sweetness they add to the paratha.

This pyaz besan paratha is made from long lasting ingredients like onions, flours and spices. The only fresh ingredients with a short shelf life that I used here are green chillies and coriander leaves. You can use or skip these based on your choice.

Pyaz Besan Paratha has a very simple stuffing made by frying onions until translucent and then adding green chillies, besan, and various spices. I like to add in a little sugar too, for a change. Amchur or dry mango powder along with the lime juice, add a sour note to the paratha and the fresh green chillies along with the red chilli powder, add some heat. While you can make the paratha dry like Sattu paratha with no water, I prefer the stuffing to be a little moist.

I did not video shoot the dough making process, but it is the regular dough used for parathas, phulka, chapati or roti. It is a very simple dough made with whole wheat flour, a little bit of salt and plain tap water. This is mixed and kneaded until you have a soft smooth dough. Since this is a flatbread recipe, the dough needs no proofing time and you don't even really need to rest it, but traditionally the dough is rested to activate the gluten in it. I suggest resting it for at least 15 minutes. You can also knead this dough in advance and store it in an airtight box in the fridge for about 1 week. I have never frozen the dough, so I cannot comment on it.

Pyaz Besan Paratha is vegan and fits a plant-based diet.

Pyaz Besan Paratha is best served hot along with some butter, or curd, or the desi Indian pickle.

Pyaz Besan Paratha Recipe

Yield:                8 Parathas


Ingredients:


For the stuffing:


1 large Onion
4 Tbsp Gram flour (Besan / Chickpea flour)
1 tsp Coriander Powder
1 tsp Cumin Powder
0.5 tsp Turmeric Powder
1 tsp Red Chilli Powder
0.5 tsp Amchur or Dried Mango Powder
0.5 tsp Chaat Masala
1 tsp Sugar
Salt to taste
3 Tbsp Oil
0.5 cup Water
0.25 Lime

For the dough:


3 cups Wholewheat flour
0.5 tsp Salt
Water as required
Oil to fry

Method:


1. To make the dough, take the whole-wheat flour in a large bowl and add salt. Add water as required and knead it into a soft smooth dough. Cover and rest for 15-20 minutes. If the dough is left over after making parathas, this can be stored in the fridge and used to make chapatis or rotis. 
2. Heat the oil for the stuffing in a pan and add in the finely chopped onions. Fry until translucent.
3. Add the finely chopped green chilli and mix well.
4. Add in the coriander powder, cumin powder, turmeric powder, amchur, and chaat masala. Mix well.
5. Add the besan and roast until lightly browned on low heat.
6. Add in the sugar, salt and red chilli powder and mix well.
7. Squeeze in the lime juice and add 0.5 cup of water in parts. Mix well.
8. Turn off the heat and add in the finely chopped coriander leaves. Allow the stuffing to cool. 
9. Dust the rolling platform with whole-wheat flout. Take a lime sized ball of the dough and roll it into a small disk. Roll the edges thinner.
10. Spoon in the stuffing and seal the edges of the dough.
11. Dust more whole-wheat flour and roll out the paratha to a thickness of about 3mm.
12. Heat a pan and grease it.
13. Place the paratha on the pan and spoon oil over and around the paratha. Cook the paratha on medium to high heat.
14. Flip the paratha when the first side is cooked. Cook the paratha until the second side is cooked too.
15. Serve paratha hot with butter, pickle or curd/yogurt.

I'm a complete breakfast lover! These days breakfast is served with a side of "Man with a Plan" playing on Amazon Prime. The show on the side changes, but the love for breakfast never does.

Right from childhood, I've always woken up hungry. It doesn't matter what time I wake up, it could even be a short afternoon nap, but I am hungry for the first 10 minutes after I wake up. It seems like I spend a lot of energy in sleeping and dreaming. But this also gives me the opportunity to actually enjoy my breakfast. I've heard of people forgetting to eat their breakfast (Gee!) and people not being hungry even an hour after waking up (Raj!), but not me, I was born to enjoy the first meal of the day.

Since this has always been my favorite meal, I keep searching for recipes and ideas to keep it interesting. And for me breakfast has to be instant, else it has to be made the previous night. I cannot wait for hours to prepare something. So instant recipes are always a hit with me, like this Instant Mix Veg Uttappa.

To tell you the truth, Uttappa is my favorite way to eat a dosa, even over a Masala Dosa. It's something about those charred onions on top that just makes me want it more than the others. I just went a little ahead with this Instant Uttappa, I topped it not just with onions but with a mixture of vegetables. You can keep it traditional and just use onions, or just use tomato. I love Tomato Uttappa too, with a little bit of spicy chutney pudi sprinkled on top of it.

This Instant Mix Veg Uttappa requires just a few ingredients. Rava or Semolina or Sooji forms the base along with some sour plain curd (yogurt). A pinch of baking soda or cooking soda is added to give it that slight fluffiness. You can also use fruit salt like Eno, but add just a pinch. These ingredients along with salt and water just form the dosa, the actual base of the Uttappa. As I mentioned earlier, you can now top this with vegetables of your choice - traditional choices are onions or tomatoes, I used a variety - onions, tomatoes, cabbage, capsicum and carrot along with some green chillies, curry leaves and coriander. 

Instant Mix Veg Uttappa can be served for breakfast or as an early evening snack. You can also serve it for dinner (I'm a big "breakfast-for-dinner" person). 

Serve the Uttappa with a fresh coconut chutney.

Ingredients:


1 cup Semolina (Rava)
0.75 cup Yogurt (Curd)
1 cup Water
0.25 tsp Baking Soda
1 Onion, finely chopped
0.5 Tomato, finely chopped
0.5 cup Cabbage, finely chopped
0.5 Carrot, grated
2 Tbsp Capsicum, finely chopped
1 Green Chilli, finely chopped
Curry leaves
Coriander leaves, finely chopped
Oil to make the dosa
Salt to taste

Method:


1. Mix together semolina, yogurt, 0.5 tsp salt and 0.25 cups of water until well combined and keep aside for 20 minutes.
2. After 20 minutes, add in the baking soda and mix.
3. Add a little water and mix until there are no lumps. Add more water as required, the batter has to be of the same consistency of a dosa or pancake batter.
4. If the batter is too thin, you can add in a little rice flour.
5. Mix together the onions, tomatoes, carrots, cabbage, capsicum, curry leaves, green chilli and coriander leaves in a separate bowl.
6. Add a little salt and mix well.
7. Grease a dosa tava or a flat frying pan.
8. Once the tava is hot, pour one spoonful of batter onto it.
9. Top it with the mix vegetables. Pour a teaspoon of oil on the top.
10. Allow the uttappa to cook for 1-2 minutes on one side or until slightly browned. Cook on low to medium heat.
11. Flip the uttappa and allow it to cook completely, approximately 2-3 minutes.
12. Remove from tava and serve hot along with some fresh coconut chutney.

You asked for snacks, so here goes - Masala Bread Toast made in full Banglore's Iyengar Bakery style!!

So I recently posted a poll on my Facebook Page. Have you liked it yet? Go on, like it so you never miss out on what's cooking on One Teaspoon Of Life!! Anyway, so while not many of you voted, the choice was waaay too clear. All you ever want to eat is snacks. There is no satisfying you folks out there, is there? But you are my kinda people. I would have voted snacks too! To say I love snacks would be an understatement. I am forever hungry for snacks, just like you.

Today I'm sharing an extremely simple recipe. This Masala Bread Toast is an extremely popular product in Banglore's famous Iyengar Bakeries. And something I buy regularly. Every evening as I travel home from work, I have just one thought on my mind - "What do I eat for evening snacks today?". Sometimes, it is just leftover breakfast (I always make extra), or a dosa or pakoras, but a lot of times, it is this Masala Bread Toast from the bakery right behind my apartment complex. 

So when you guys asked for snack, I thought this recipe was perfect. It is quick, it is filling, it is healthy if you use the right bread, and it is vegan too. But above all, it is delicious and your family will love it. It is also an excellent way to add veggies to your snacks. Although I have used some spice mixes like garam masala and chaat masala, you can skip them if making for kids or if you don't have access to them. The masala tasted perfectly tasty without any spices too.

Iyengar Bakery Style Masala Bread Toast

Yield:                Makes 5 toasts

Ingredients:


5 slices Bread
1 large Onion, roughly sliced
1 medium Carrot, grated
1 small Tomato, diced
2 Tbsp chopped Coriander
8-10 Curry leaves
1 Green Chilli, finely chopped
0.5 tsp Sugar
0.5 tsp Mustard Seeds
0.5 tsp Cumin seeds
0.25 tsp Garam Masala
0.25 tsp Chaat Masala
2 Tbsp Oil
Salt to taste

Method:


1. Heat oil in a pan and add mustard seeds
2. Once the mustard splutters, add in the cumin seeds.
3. Once the cumin browns slightly, add the curry leaves and allow them to crisp up.
4. Now add the onions and saute them until they are lightly browned.
5. Toss in the grated carrot and mix well.
6. Add the diced tomatoes and mix.
7. Add the salt, chaat masala, garam masala and sugar. Mix well. Adjust the seasoning to suit your taste.
8. Cook for 2-3 minutes and remove from heat.
9. Add the chopped coriander leaves and mix well.
10. Dry toast the bread. You can add butter or oil while toasting if you like.
11. Spread the masala on the toast and serve it immediately like an open sandwich.
12. You can make the masala before and store it in the fridge, just heat it up before serving and top on the freshly toasted bread.

Ever walked by a vegetable aisle wondering what "that" vegetable is and how one cooks it? 

Happened to me a few years ago when I saw a lot of vegetable carts on the road side stocking up on green stalks with a tiny white bulb at the end. Curiosity made me ask what it was. And I was introduced to the "Onion Stalk / Flower" or "Eerulli Kaavu"/"Eerulli Hoovu" as they call it in Bangalore. The green stalk is the onion plant with the flower at the end. If you have never seen it or tasted it, the closest thing to it would be green onions or spring onion stalks. It is never sold with the onion bulb attached. While sometimes, it can be pungent like onions, most often it is simply sweet and crunchy.

And the good news is, it is right now in season in Bangalore and you will see it stocked all over the local markets and supermarkets. 

I love cooking with seasonal vegetables. They taste so much better and are fresher than those annually available veggies. The first time I saw these onion stalks, I asked the vendor how one cooks it. He told me just stir fry it in oil and add spices. That's it! His recipe was so simple and it was tasty, if you like onions a lot. I do like onions, but I'm not a fan of a bowl full of them. So I went looking for different ways to cook it and I chanced upon this recipe by Chandrima . She added stir fried brinjals or eggplant to the fried onion stalks. Adding brinjal added some substance and texture to this dry curry. 

These onion stalks are versatile, I added them to "Thalipeeth" and it tasted really nice. I made this same curry with potatoes instead of brinjals and everyone loved that too.

5-6 small Brinjals
4 tsp Oil
1 tsp Turmeric Powder
1 tsp Red Chilli Powder
Salt to taste

Method:


Chop the brinjal into chunks.
Heat 2 tsp oil in a kadhai / pan.
Add the brinjals and cook on low heat until done.
Add in a little salt, turmeric powder and stir fry for 1 minute.
Chop the onion stalks into 1" pieces.
Heat the remaining oil in the kadhai and add the onion stalks.
Add salt and turmeric powder. Mix well.
Cover and cook until done. I left mine crunchy, cook longer for a softer texture.
Add in the cooked brinjal and red chilli powder.
Mix well and stir fry for 2-3 minutes.
Serve hot with rice and dal or with rotis.

Happy 2018 guys!!! I know I’ve been AWOL for way too long from the blog and I feel extremely guilty. It may be a new year but my excuses are the same – work, home and travelling took up so much time that I could not devote enough to my one passion – my blog. Just to catch you up a little, I spent the last week in Chicago freezing myself. I went from a comfortable 20 degrees C (Positive) and to -20 degrees C (negative) for one week. My fingers froze when they weren’t in the coat pockets and my ear hurt when it errantly slipped out of the cap. I applaud those who brave this weather regularly, but I’m not made for that chill. While it was an a nice to experience just how that cold feels, I’m happy to be back to warm weather where I don’t need even a light jacket and I can roam around in open sandals.

I am one of those weirdos who actually likes airline food. I look forward to meals on planes. But after 8 meals in a span of one week plus a week of eating in restaurants, I’m just simply glad to be back to eat warm clean food at home. A touch of spice, a lot less cheese and a lot of health – that’s how I like my everyday food.

So my first recipe of 2018, is this warm flavorful Thai Green Curry with lots of vegetables that is perfect for cold winters. Did I tell you how much I love it? It is simply delicious plus it is hearty, healthy, vegan, gluten-free and full of fiber. Serve it with a bowl of brown rice for a healthier meal. I also had so much fun making this curry. I found all the fresh ingredients in the market and they were such a colorful bunch. I enjoyed shooting this recipe, all those colors popped beautifully.

Back to the recipe, one might be discouraged by the number of ingredients, but I ask you to look beyond it. The number may be more, but the effort is really not too much. The prep here is more time consuming than the actual cooking. And this is the perfect recipe to engage your family – ask your partner or kids to help out in peeling, chopping and slicing. Make it a family recipe and you won’t be so daunted.

Thai Green Curry (Vegan)

Ingredients:


For the Green Curry Paste:


3 Lemongrass Stalks
2 Tbsp chopped Ginger
4-5 cloves Garlic
1 small Onion
2-3 green Onions (spring onions)
2-3 green Chillies
1 Tbsp fresh Turmeric or 0.5 tsp Turmeric Powder
Handful of Basil leaves
Handful of Coriander leaves
2 tsp Coriander seeds
1 tsp Cumin seeds
0.5 tsp Peppercorns
Zest of 1 Lime
1-2 Tbsp Lime juice
1 Tbsp Palm Sugar (Jaggery/Sugar)
Water as required
Salt to taste

For the vegan Thai Green Curry:


1 cup thick Coconut Milk
1 cup thin Coconut Milk
3 Tbsp fresh Green Curry Paste
75 gms firm Tofu (cubed)
0.5 diced Capsicum
1 cup Broccoli florets
0.5 cup sliced Zucchini
1 small Carrot sliced
4-5 Mushrooms sliced
0.5 cups cubed Sweet Potato (boiled)
1 diced Bokchoy or handful of Spinach
3-4 Tbsp Oil
Salt to taste
Water as required

Method:


To make the Green Curry Paste:

1. Powder the coriander seeds, cumin seeds and peppercorns coarsely. I hand pounded these in a mortar with a pestle.
2. Remove the outer later of the lemongrass stalk and chop into slices.
3. Roughly chop the green chillies, onions, green onions and garlic.
4. Add the pounded spices, lemongrass, green chillies, onions, green onions, garlic, chopped ginger, chopped turmeric, coriander leaves, basil leaves, lime zest, lime juice, sugar/jaggery and 1 tsp of salt to the food processor or a mixer and give it a whizz.
5. Scrape the sides of the jar and grind again. Add water by the spoonful to get a smooth paste.
6. Adjust salt, sugar and lime as per your taste.
7. Fill in sterilized glass jars and store in the refrigerator for up to 2 weeks.
8. This recipe makes approximately 1.5 cups of curry paste.

To make the vegan Thai Green Curry:


1. Heat oil in a wok or kadhai.
2. Drain the excess water from the tofu using a kitchen towel. Add the tofu to the wok and fry until golden.
3. Remove the tofu and keep aside.
4. Add the carrots, mushroom, zucchini, broccoli, bokchoy stems and capsicum and stir fry them for 3-4 minutes.
5. Add the bokchoy leaves or spinach and stir until they are wilted.
6. Cook until the vegetables are cooked to your liking and remove it from the wok and keep aside. Preferably, the vegetables should be crunchy and not overcooked and mushy.
7. Heat the remaining oil and add the green curry paste. Stir fry it for 1-2 minutes until fragrant.
8. Add the stir fried vegetables along with the boiled sweet potato to the wok.
9. Add the thin coconut milk and cook it for 3-4 minutes.
10. Add the thick coconut milk and salt and cook for another 3-4 minutes.
11. Add the tofu before serving. Serve the curry hot with steamed white rice.
