Healthy Miso Noodle Soup


This 30 minute vegan healthy Miso Noodle soup is perfect for those cold winter nights!!

Miso Soup... I'd read about it, seen it but never got a chance to try it. Reason? It usually contains fish. Even the ready to eat soup packets have fish in them. So I knew the only thing I could do was make it myself, without fish, of course. But for that I needed Miso Paste. Hard that it may sound, but not many people have actually heard of Miso Paste, not just in India but in a lot of South East Asian countries as well. I looked for it high an low in everywhere nope, I did not find it. It is more apt to say I did not find it in the quantity and the cost that I was actually looking for. I did find it in a Japanese store in Cambodia but it was over 1 kg in quantity and with everything written in Japanese on the cover, I was completely lost on what the ingredients were. It is available in India, however, it is either not too good or way too expensive. I finally purchased my first batch in Whole Foods, Chicago and have been loving it. It is fish free, salty-sweet and delicate in flavor. I could it just by the spoonful.

Miso is a paste of rice and soybeans that has been fermented using koji. Shiro Miso is the mild light colored one and also the one I used in this recipe. It just adds a hint of flavor but a lot of health to the soup. It is a great source of iron and protein. You can replace it with the red miso or Aka Miso, but definitely reduce the quantity as that is much stronger than the white miso.

Traditionally, the base of a miso soup is a Japanese stock called dashi which is made from sea kelp (kombu) and fish flakes (bonito flakes), but that is not something I would eat. So I skipped that totally and made it vegan. If you can find some sea weed like wakame or nori, add it to enhance the umami of the soup. I would have loved to, but I did not have any.

I know all my talk is about Miso here and it is a Miso soup, but even if you cannot find a good miso paste, don't be disheartened. Make the soup anyway, just call it Noodle Soup :) The soup is very healthy because of all the vegetables it contains. It is also super low in calories, with one serving being under 150 calories. All the more reason to make it, don't you think? It is absolutely guilt free. And if you thought it won't fill you up, let me warn you right away, you are wrong.  I could never drink/eat 2 whole servings because all that fiber from the vegetables filled me up right away.

I used whole wheat noodles in the soup, you can substitute it with soba noodles. Udon noodles wouldn't be bad as well. This soup is the healthiest thing you can have on a cold winter night. And the best part, it takes less than 30 minutes to make.

Healthy Miso Noodle Soup

Vegan healthy soup made with white miso, wholewheat noodles and fresh vegetables
Vegan healthy soup made with white or shiro miso, wholewheat noodles and fresh vegetables. 

Recipe Type:  Soup
Cuisine:            Japanese
Prep Time:     10 minutes
Cook time:     20 minutes
Yield:                Serves 3-4

Ingredients:


3 tsp Shiro Miso Paste
50gms Wholewheat Noodles
1.5 Tbsp Dark Soy Sauce
1 Tbsp Sriracha Sauce
30gms Tofu, cubed
4-5 Mushrooms, sliced
3 baby Bok choy, chopped roughly
0.5 cup Broccoli florets
1 small Onion
1 cup Cabbage, shredded
1 small Carrot, julienned
3 tsp Oil
1 liter Vegetable Broth or Water
Salt to taste
Pepper to taste

Method:


Cook the noodles as per instructions on the packet. Drain and keep aside.
Heat oil in a deep pan and fry the onions until they are translucent.
Add the broth or water and bring to a rolling boil.
Dissolve the miso paste in half cup of water and add it to the pan.
Add the soy sauce, sriracha sauce, salt and pepper to taste.
Boil for 2-3 minutes.
Add the bokchoy, broccoli, mushrooms, cabbage and carrot and boil for another 2 minutes.
Add the noodles and tofu and serve hot.

Happy 2018 guys!!! I know I’ve been AWOL for way too long from the blog and I feel extremely guilty. It may be a new year but my excuses are the same – work, home and travelling took up so much time that I could not devote enough to my one passion – my blog. Just to catch you up a little, I spent the last week in Chicago freezing myself. I went from a comfortable 20 degrees C (Positive) and to -20 degrees C (negative) for one week. My fingers froze when they weren’t in the coat pockets and my ear hurt when it errantly slipped out of the cap. I applaud those who brave this weather regularly, but I’m not made for that chill. While it was an a nice to experience just how that cold feels, I’m happy to be back to warm weather where I don’t need even a light jacket and I can roam around in open sandals.

I am one of those weirdos who actually likes airline food. I look forward to meals on planes. But after 8 meals in a span of one week plus a week of eating in restaurants, I’m just simply glad to be back to eat warm clean food at home. A touch of spice, a lot less cheese and a lot of health – that’s how I like my everyday food.

So my first recipe of 2018, is this warm flavorful Thai Green Curry with lots of vegetables that is perfect for cold winters. Did I tell you how much I love it? It is simply delicious plus it is hearty, healthy, vegan, gluten-free and full of fiber. Serve it with a bowl of brown rice for a healthier meal. I also had so much fun making this curry. I found all the fresh ingredients in the market and they were such a colorful bunch. I enjoyed shooting this recipe, all those colors popped beautifully.

Back to the recipe, one might be discouraged by the number of ingredients, but I ask you to look beyond it. The number may be more, but the effort is really not too much. The prep here is more time consuming than the actual cooking. And this is the perfect recipe to engage your family – ask your partner or kids to help out in peeling, chopping and slicing. Make it a family recipe and you won’t be so daunted.

Thai Green Curry (Vegan)

Ingredients:


For the Green Curry Paste:


3 Lemongrass Stalks
2 Tbsp chopped Ginger
4-5 cloves Garlic
1 small Onion
2-3 green Onions (spring onions)
2-3 green Chillies
1 Tbsp fresh Turmeric or 0.5 tsp Turmeric Powder
Handful of Basil leaves
Handful of Coriander leaves
2 tsp Coriander seeds
1 tsp Cumin seeds
0.5 tsp Peppercorns
Zest of 1 Lime
1-2 Tbsp Lime juice
1 Tbsp Palm Sugar (Jaggery/Sugar)
Water as required
Salt to taste

For the vegan Thai Green Curry:


1 cup thick Coconut Milk
1 cup thin Coconut Milk
3 Tbsp fresh Green Curry Paste
75 gms firm Tofu (cubed)
0.5 diced Capsicum
1 cup Broccoli florets
0.5 cup sliced Zucchini
1 small Carrot sliced
4-5 Mushrooms sliced
0.5 cups cubed Sweet Potato (boiled)
1 diced Bokchoy or handful of Spinach
3-4 Tbsp Oil
Salt to taste
Water as required

Method:


To make the Green Curry Paste:

1. Powder the coriander seeds, cumin seeds and peppercorns coarsely. I hand pounded these in a mortar with a pestle.
2. Remove the outer later of the lemongrass stalk and chop into slices.
3. Roughly chop the green chillies, onions, green onions and garlic.
4. Add the pounded spices, lemongrass, green chillies, onions, green onions, garlic, chopped ginger, chopped turmeric, coriander leaves, basil leaves, lime zest, lime juice, sugar/jaggery and 1 tsp of salt to the food processor or a mixer and give it a whizz.
5. Scrape the sides of the jar and grind again. Add water by the spoonful to get a smooth paste.
6. Adjust salt, sugar and lime as per your taste.
7. Fill in sterilized glass jars and store in the refrigerator for up to 2 weeks.
8. This recipe makes approximately 1.5 cups of curry paste.

To make the vegan Thai Green Curry:


1. Heat oil in a wok or kadhai.
2. Drain the excess water from the tofu using a kitchen towel. Add the tofu to the wok and fry until golden.
3. Remove the tofu and keep aside.
4. Add the carrots, mushroom, zucchini, broccoli, bokchoy stems and capsicum and stir fry them for 3-4 minutes.
5. Add the bokchoy leaves or spinach and stir until they are wilted.
6. Cook until the vegetables are cooked to your liking and remove it from the wok and keep aside. Preferably, the vegetables should be crunchy and not overcooked and mushy.
7. Heat the remaining oil and add the green curry paste. Stir fry it for 1-2 minutes until fragrant.
8. Add the stir fried vegetables along with the boiled sweet potato to the wok.
9. Add the thin coconut milk and cook it for 3-4 minutes.
10. Add the thick coconut milk and salt and cook for another 3-4 minutes.
11. Add the tofu before serving. Serve the curry hot with steamed white rice.

This Mushroom Cafreal was the perfect finish to my weekend. I spent some quality time with my favorite girl in the whole wide universe and I had to end the day with some real quality food. 

What quality time you ask? With whom you ask?

I spent my weekend strolling through crowded lanes of local markets with my favorite girl, my sis Gee - some real awesome quality Sister Time. We went to the old Bangalore areas of Chickpet, Raja Market, Baba Market and walked through lanes and little markets that we had never seen before. While we did not have any real shopping to do, we literally bought nothing - NA DA, we did something we hadn't done in such a long time. We did this a lot when we were both single and had all the time in the world to do what we do best - Window Shopping! We'd pick a street or a market and walk through it gazing at all the goods, barely stopping for a meal. That's exactly what we did, we walked, talked and laughed and ate just one Vada-Pav each and came back.

And as a plus point, in a totally unexpected little corner, I found a dry fruit store that pretty much has every nut and seed that I've only read of in recipes but never set my eyes upon. They had pecans and cranberries and pine nuts and hazelnuts etc etc. That tiny shop packed a punch. I'm so excited about my find!! Now all I need to do is find awesome recipes, so I can go back there and buy whatever nut I need.

Back to my dish of the day - Mushroom Cafreal. Although Cafreal is usually made with chicken, but this vegetarian option also rocks!

This Mushroom Cafreal is absolute MAGIC. The mushrooms are full of texture, and the green sauce is a full on flavor bomb. Mushrooms are always great, I simply LOVE Mushrooms. But if you don't replace the mushroom in this recipe with potatoes or cauliflower and it will taste just as awesome. I did make a Potato version for Raj and he loved it.

This Mushroom Cafreal is a game changer. Most people's idea of a curry is something that starts with roasting spices and involves cooking slowly on the stove top until everything comes together to get a balance of flavors. But this curry is nothing like it. It has only three steps - blending, marinating and frying. Of course, there are spices involved, but no roasting or frying them. And no slow cooking at all. This curry is complete from start to finish in almost 30 minutes. Yes, that's it - Half an Hour!!


The Cafreal is all about the sauce, that is also the marinade. It is such a simple sauce yet so delicious and versatile. It can be used not just for making Cafreal, but also in Biryani or to add zing to so many other curries. The green sauce is made of humble ingredients - fresh Coriander leaves, Garlic, Green Chillies, Cinnamon, Cloves, Cumin, Pepper, Sugar (optional), and lime juice. While the traditional recipe may call for vinegar, I can't stand its smell, and I also prefer the freshness of the limes over the vinegar, so I used lime juice. To make the marinade, just grind everything with a little water. You can store this in a glass jar in the fridge for 1-2 weeks. Add salt whenever you are using it.

Rub in the marinade to the mushrooms and let them soak in all that goodness. Then heat oil in a pan and fry the mushroom in one layer. If using a smaller pan, then it can be done in batches. Once the first side is browned, flip and allow the other side to brown. Then add the remaining marinade and fry for a few minutes until the raw smell goes off. If you want, you can also add water at this point to make a gravy. Garnish with coriander and lime and serve it with Pao or bread.

Ingredients:


200 gms button Mushrooms
2 cups fresh Coriander leaves
1 Tbsp Garlic, chopped
1 Tbsp Ginger, chopped
2-3 Green Chillies, finely chopped
1" Cinnamon stick
0.5 tsp Cumin Seeds
8-10 Black Peppercorns
2-4 Cloves
0.5 Lime
1-2 Tbsp Water
3-4 Tbsp Oil
Salt to taste

Method:


1. Blend together coriander leaves, cumin seeds, cinnamon, black peppercorns, cloves, ginger, garlic, chilli, salt, lime juice with a little bit of water until smooth.
2. Clean the mushrooms and add in the blended marinade. Mix until all mushrooms are coated. You can halve the mushrooms if they are large.
3. Heat oil in a pan and add the mushrooms in a single layer. If using a small pan, this can be done in batches.
4. Cook on medium heat until the first side browns.
5. Flip and allow the other side to brown.
6. Add any remaining marinade and stir for 4-5 minutes or until the raw smell disappears.
7. If you want a gravy, you can add water at this stage to get the desired consistency and allow it to come to a boil.
8. Serve hot with pao or bread, or just like an appetizer.

Mushroom Biryani

It's good to be back... especially with flavorful dish like Mushroom Biryani.

I've had a family filled weekend since my last post and days and days of writer's block.

I attended the first family wedding in over 2 years and what fun it was! I got to meet my cousins, aunts and uncles, eat good South Indian food and the best part was I got to dress up. Out came all those heavy Silk Sarees that I had tucked to the back of the cupboard. LOVED wearing every one of them.

Before the wedding, my palate had somehow mellowed down and I was more for eating less spicy and blander food. No known reasons for the change, but it was definitely not welcome. But the spicy South Indian Rasam-Rice managed to wake up the taste buds and then they craved more spice.

When I think of spicy food, I always think of Biryani. Biryani is usually meat cooked along with lots of spices and rice. But in India, we vegetarians are super lucky, cause there is always a vegetarian version of a non vegetarian dish, so we never miss out on the flavors. I've made vegetable biryani many times before, but this was my first time making Mushroom Biryani and with all my love for Mushrooms, there was really no way I could not LOVE this biryani.

Unlike the biryanis I've made before, I did not half cook anything and layer anything. This is a simple biryani - cook the rice until done, cook the mushroom masala until done and then just mix the two well to get a flavorful Mushroom Biryani.

To make the perfect Mushroom Biryani, you need 3 things:
  1. Rice:  Biryani is as much about the rice as it is about the meat or the vegetables. Different regions use different varieties of rice, with Basmati being the most popular rice. Long grained fragrant Basmati Rice is perfect for Biryanis, and that is exactly what I used. Rice is washed and allowed to soak for 30 minutes, until it is cooked along with whole spices to enhance its taste.

  2. Mushrooms: The hero of the dish is definitely the mushrooms. Either keep the mushrooms whole or half them. Anything smaller than that and the mushrooms will be lost in the Biryani. Mushrooms are cooked along with onions, ginger-garlic, tomato puree, yogurt, spices and herbs. In traditional style, a paste of browned onions is also added to the mushroom masala. Use any large mushrooms you can find. 

  3. Spices: Any biryani is incomplete without an array of whole spices. A mix of cinnamon, clove, pepper, green cardamom, black cardamom, cumin seeds, bay leaf and nutmeg is added to the rice as well as to the mushroom masala. Whole spices have a long shelf life and it's good to have your pantry stocked with them. However, if you have run out of spices or don't use them much, you can replace the spices in the mushroom masala with store bought Biryani Masala ( spice powder).
Always serve your Mushroom Biryani piping hot. Raita or Salan make for great accompaniments with the Biryani.

Cuisine:            Indian
Prep Time:     10 minutes
Cook time:     45 minutes
Yield:                Serves 2-3

Ingredients:


For the Biryani Rice:


1.25 cups Basmati Rice
1 Bay leaf
2 Cloves 
1 Green Cardamom
0.5" piece Cinnamon
1 tsp Salt
2.5 cups Water

For the Mushroom Masala:


15-20 Button Mushrooms
2 Onions, large
1 Tomato, medium
0.5 cup Yogurt
1" piece Ginger
5-7 Garlic cloves
0.5 tsp Turmeric
1 tsp Red Chilli Powder
0.5" piece Cinnamon
1-2 Cloves
1 Bay leaf
5-6 Black Peppercorns
0.5 tsp Cumin seeds
0.25 tsp grated Nutmeg
1 Green Cardamom
1 Black Cardamom
0.5 tsp Garam Masala
Handful of fresh Mint leaves
Handful of fresh Coriander leaves
5-6 Tbsp Oil
Salt to taste

Method:


Wash the rice twice and keep is aside.
Halve the mushrooms and keep aside.
Slice the onions.
Chop the tomatoes finely or puree the tomato.
Crush the garlic and ginger to form a paste.
In a pan, heat 3 Tbsp of Oil. Once the oil is hot, add 3/4 the onion and fry on low heat until the onions brown. Stir frequently, taking care not to burn the onions.
In a large kadhai or saucepan, add water, salt and spices and allow it to come to a rolling boil.
Add the washed rice and cook on medium heat until the rice is almost done. Drain out the excess water and spread the rice out in a large plate to cool. This will prevent the rice from becoming sticky.
Heat the remaining oil in a clean pan or kadhai.
Add the remaining onions and the whole spices and cook until the onions are cooked.
Add the ginger garlic paste and fry it for 2 minutes, stirring frequently.
Add the chopped tomatoes and fry for 4-5 minutes or until the tomatoes are soft.
Add the halved mushrooms and salt as required. Cook for 5 minutes on low heat.
Keep aside 1 Tbsp of browned onions, and puree the rest.
Add the onion puree to the mushrooms and fry for 1 minute.
Whisk the yogurt and add it to the mushrooms. Add the turmeric powder, red chilli powder and garam masala and simmer on low heat for 5 minutes.
Add chopped mint and coriander leaves and cook for 2-3 minutes.
Pick out the whole spices from the rice and fluff up the rice with a fork to separate the rice grains.
Add the rice to the mushroom masala and mix well. 
Add salt as required and mix well.
Cook for 2-3 minutes.
Garnish with the remaining browned onions and serve hot.

Caramelized Onions are super delicious. Sweet, soft, rich brown is the way to go. Caramelizing onions is a slow process, you have to lovingly delicately coax those pungent crisp onions into sweet submission. But here's the good part, you can caramelize them in advance and stock them in your fridge. After that they can go into sandwiches, on top of crackers or soups, or you know, eat them just like that standing in front of your fridge. They taste great anyway. To caramelize the onions, slice the onions into slices and then gently fry them on low heat with a pinch of salt until they brown slightly. Then add balsamic vinegar, sugar or jaggery, and a little bit of water or stock and let them cook until they are sweet, soft and dark brown. Just make sure they never burn or they will turn bitter. I promise you this is the only time bit of the tart that actually takes some effort.

Mushrooms - The easiest part of the tart. Clean them, slice them, saute them. Sprinkle over some salt and pepper and they are done. My favorite thing about mushrooms is how quickly they cook. Don't you just love it. I prefer when my mushrooms still have texture and bite to them, so I tend to undercook mushrooms. You go ahead and cook them how you like them. Remember, they also cook in the oven when the tart is baked after assembling.

Pastry seem daunting to you? All that rubbing cold butter with flour until it resembles sand? Keep that for another day. What I have here is a vegan pastry that can be made in under 5 minutes. Well, except the baking part, of course. Here's a recipe I learnt a long time ago - whisk cold water with oil and it combines to form a smooth emulsion. Add flour and salt to this and gently fold in. No kneading required. In fact, the recipe asks you to not knead. Mix until combined and then refrigerate it for 15-20 mins and then roll out and blind bake them for 15 more minutes until they are done. Wasn't that the easiest pastry you ever made?

The last bit is the Sauce. It is creamy, rich and cheesy. This sauce is what brings together the whole tart and also imparts the maximum flavour. It is a basic white sauce, may be slightly thicker than usual with added cheese. This sauce needs to be thick cause the tart does not contain any eggs, so a thin sauce will make your pastry soggy and the tart runny. To make the sauce, just fry flour in oil or butter and add milk. Add in the garlic, salt, pepper and nutmeg and simmer until you get the desired consistency. Then just mix in grated cheese and allow it to cool slightly before adding to the tart. 

The number of steps may look a lot, but then good things need some effort. Let's be realistic, I don't see you caramelizing onions or making a cheesy white sauce on a busy weeknight, but if you get a free night or weekend when you decide to sit at home and watch classic movies on TV, then give this Caramelized Onion Mushroom Tart a try, and I promise you will not regret the effort you put in. Ingredients:


For the Pastry:

1 cup All Purpose Flour
0.25 cup Olive Oil
0.5 cup cold Water
0.25 tsp Salt

For the Filling:

2 large Onions
10-12 button Mushrooms
1 tsp Balsamic Vinegar
2-3 Tbsp Water
2 tsp Jaggery Powder or Sugar
1.5 Tbsp Oil + 2-3 tsp Oil
Salt to taste
Pepper to taste

For the Sauce:

3 Tbsp Olive Oil
1.5 Tbsp All Purpose Flour
1.25 cups Milk
25gms Cheese or 2 Cheese Cubes
3-4 cloves Garlic
0.25 tsp Nutmeg
Salt to taste
Pepper to taste

Method:


To make the Pastry:


Whisk together 0.25 cups of water and the oil to form an emulsion.
Take the flour in a large bowl, add salt.
Add the emulsion to the flour and mix with a spatula or hands until combined.
Fold the dough 4-5 times, do not knead.
Wrap the pastry in plastic wrap and rest in the refrigerator for 15 minutes.
Preheat the oven to 200 degree C.
Grease the tart tins.
Divide the pastry into 6 equal parts. This recipe uses 6 individual tart tins of 3.5" diameter. If you plan on making one large tart, do not divide the dough.
Dust the counter with flour and roll out the pastry until it is big enough to cover the tart tin.
Place the rolled out pastry in the tin and gently press the pastry in tin. Remove any excess pastry from the sides.
Put in baking beans and bake the pastry for 12-15 minutes or until done.
Allow them to cool a little and then remove the pastry shells from the tins and keep aside.

To make the Sauce:


Heat oil in a pan.
Once the oil is hot, add in the flour and fry for 45-60 seconds.
Add the milk and allow it to come to a boil.
Lower the heat and add the salt, pepper and nutmeg.
Continue to simmer for 1-2 mins until the sauce thickens.
Grate the cheese into the sauce and mix well.
Simmer for another 2-3 mins and remove from heat. If the sauce has become very thick, add 1-2Tbsp milk to loosen it.

To make the Filling:


Slice the onions lengthwise.
Heat 1.5 Tbsp Oil in a frying pan.
Once it is hot, add the onions. Add a pinch of salt and mix well,
Fry the onions on low heat until they are golden brown. Caramelizing onions takes time, this may take around 18-20 minutes.
Add the balsamic vinegar, sugar or jaggery and 2 Tbsp of water and allow to cook for another 8-10 minutes.
When the onions are brown, sweet and soft, remove from heat and keep aside.
Slice the mushrooms.
Heat oil in a pan and when it is hot, add the mushrooms.
Add salt and pepper.
Saute the mushrooms for 4-5 mins until soft and remove from heat.

Assembling the Tart:


Preheat the oven to 200 degree C.
Place the caramelized onions and mushrooms in the tart.
Spoon in the sauce.
Sprinkle another layer of onions and mushrooms on top.
Bake for 15-20 minutes or until the top browns.

Mushroom in Creamy White Sauce

This is an ex-roomie's recipe. We used to take turns to cook on weeknights and she came up with this extremely yummy and versatile recipe. It is so simple to make and can be altered as per your wish. You can add oregano or rosemary to give is a different twist. You can use this as a sauce for pasta or noodles. This is a perfect weeknight dinner...




Ingredients:

Mushrooms - 2 cups (sliced/chopped)
Onions - 2 tbsp (chopped)
Corn flour - 1 tsp
Soy sauce - 1 tsp  (Increase or decrease as per your liking)
Milk - 1/2 cup
Cheese grated - 1 cube (Optional)
Oil - 2 tsp
Salt
Pepper - Freshly crushed

Method:

Heat the oil in a kadhai and fry the onions until translucent.
Add the mushrooms and saute until cooked. Be careful while cooking mushroom, make sure it does not overcook. They taste best with a little bite left in them.
Add the milk to the mushrooms and allow the milk to boil.
Lower the heat so that the milk does not overflow.
Dissolve the corn flour in 2 tbsp water or milk.
Add it to the mushrooms.
The gravy will begin to thicken, so keep stirring else it will form lumps.
Add the salt, pepper and the soy sauce.
Add grated cheese.
Keep stirring for about 1 minute.
Remove from heat and serve hot.
