Blueberry Muffin (Eggless)

I've been wanting to make this for so long... I've searched high and low for fresh blueberries in Bangalore, I found them outside the Nilgiris on Brigade road but did not end up buying them due to their extremely high cost. It was around Rs.800 for a small box of about 100-200gms. I instead picked up canned blueberries for Rs.330. I believe the result would have been much better with fresh ones or frozen ones, but I had no option. I used the recipe from the DivineTaste website and altered it a little. I must say they ended up being yummy and there are none left anymore....

Eggless Blueberry muffins made using canned blueberries and wholewheat flour

1/2 tin or 1/2 cup Blueberries
3/4 cup Maida / Flour
3/4 cup Atta / Whole wheat flour
3/4 cup Milk powder / Dairy whitener
3/4 cup Powdered sugar
1/2 cup Butter
200 ml Milk
1 tsp Baking powder
1/2 tsp Baking soda
1 tsp Vanilla extract


  • Sift together the maida, atta, baking powder and baking soda at least twice to ensure everything is well mixed
  • Add the milk powder and sugar and mix. Add less sugar to make it mildly sweet.
  • Add the milk, melted butter and vanilla and whisk for about 1-2 mins until everything is mixed.
  • Do not overmix it like for cake
  • Fold in the blueberries
  • Preheat the oven to 180 degree Celsius
  • Line the muffin tray with paper liners
  • Spoon the mixture into the liners and bake for 25 mins
  • This recipe made 16 medium sized ones.
