It's been long that we spoke about Mangoes. They are making their presence felt in the market and it's time to start giving them the attention they deserve.

I am all for enjoying the succulent sweet ripe fruit as is. But I LOVE cooking with the tart raw mango. The tartness of the raw mango is so different from that of lime or tamarind. I just find it fresher, don't you? It may be my love for the fruit talking.

I've already bought several of them and used them in chutneys, beverage, curries and many more dishes. This year I finally decided to make this Instant Mango Pickle, which is pretty much the only pickle I eat regularly. And this recipe is so easy, really, you won't believe it.

I'm a picky pickle eater. I rarely buy any, the amount of oil one finds in the packaged pickle, is enough to turn me off. This Instant Mango Pickle is one of the few I really relish eating. Unlike other traditional Indian mango pickles, this has minimal spices, letting you enjoy the tart raw mango. It is also not a pickle that you want to age and enjoy.  The more you age it, the mango gets softer and I think it is the crunch of the fresh mango that makes this all the more enjoyable.

My grand father used to pickle mangoes every summer. He had these big ceramic jars called "bharani" that he would fill to the brim with mango pickle and cover it tightly with a muslin cloth. While I don't remember eating those pickles, I always have wanted to learn to make my own pickles. 

I still have a long way to go into making those jars of pickle with their complex spice mixes, but I could not resist making this extremely simple pickle that is all about celebrating the mango. This recipe makes about 2 small jars (really small jars). It is perfect for gifting to someone who loves pickles, but cannot manage to eat all those spices. 

A few pointers to make and store the perfect Instant Mango Pickle:

  • To make a good pickle, it is important to select the right produce. While buying the mangoes, search for firm ones. Buy the roundish mangoes over the longish mangoes (I hope you understood that). Some mangoes, albeit green on the outside, tend to be ripe. Check with the seller, to confirm that what you are buying are infact raw mangoes. 
  • While slicing off the little bit of stem still present on the top of the mango, don't let the sap touch your body, it may irritate the skin.
  • Use a clean sterile jar to store the pickle.

Yield:                2 small jars


Ingredients:


2 small raw Mangoes
1 tsp Red Chilli Powder
0.5 tsp Turmeric Powder
1-2 tsp Salt
3 Tbsp Oil
1 tsp Mustard Seeds
0.25 tsp Asafoetida (Hing)

Method:


1. Wash the mangoes and dry them with a kitchen towel.
2. Slice and discard the piece of stem from the top of the mango.
3. Chop the mango finely.
4. Add salt, turmeric powder and red chilli powder. Mix well with a spoon.
5. Heat oil in a pan and add the mustard seeds.
6. Once the mustard seeds splutter, add the asafoetida.
7. Immediately pour the tempering to the bowl containing the mango.
8. Mix well.
9. Store in a clean sterile air-tight jar.
