Almond Cookies (Eggless)

Cookies... bakery cookies are my most regular indulgence. Having tried a couple of times before to make cookies, i had miserably failed. They either turned out too hard or too soft (cakey). But never say never right? Since we anyway buy cookies everyweek, I concluded why not try once again. And as they say, third time lucky. Well, I was lucky the 4th time too :). This is the simplest cookie recipe I can think of and it's healthier than it's store counterparts. I plan to experiment with different types of cookies, until then, its just the plain old Almond cookie or badam biscuit as we know it here.


Half cup almonds

Almond powder

Quarter cup maida/flour

Three fourth cup atta/whole wheat flour

3/4 tsp baking powder

Half cup butter

Creaming butter and sugar

After adding flour to butter and sugar

Adding almond powder and milk to the dough

Ingredients:

Flour (maida) – ¼ cup
Whole wheat flour (atta) – ¾ cup
Unsalted butter – ½ cup
Powdered sugar – 4-5 tbsp (heaped)
Almonds – ½ cup
Baking powder – ¾ tsp
Milk – 1tbsp
Vanilla/almond essence – ½ tsp

Method:

Sift flour, whole wheat flour and baking powder at least twice together
Mix butter and sugar for 2 mins. Add around 3 tbsp sugar. More can be added later incase needed.
Add the flour mix little by little into the butter until incorporated
Add vanilla/almond essence.
Coarsely grind the almonds and add to the batter.
Add milk and mix with hand.
Add more sugar at this point if needed.
Preheat the oven to 180 degree Celsius
Make little balls of the dough using your hands and flatten them to make cookies
Grease the baking tray and place the cookies at least 1 inch apart.
Bake for around 12-18 mins depending on the thickness of the cookies. I needed around 16mins for mine. Cookies are done when the sides begin to brown slightly.

Anu is my little sister and as much as I hate cooking she just loves it.And to say that she experiments her culinary skills on me would be wrong because I can be a nightmare when it comes to trying out things I do not like to eat.The cookies though left me craving for more.All I got were 4 and she has promised to make some more :D.
