I've newly discovered my love for millet - those ancient grains.

Off late I have been trying to eat healthier at night. My best friend lost a lot of weight by just avoiding eating rice at night, and I am inspired. I decided to give it a try. Although I'm not much of a rice person, there are nights when all I want is some rice and curry for dinner, you know, comfort food. Especially when I've been stressed out at work and the night is unusually chilly, which it kinda is with the monsoons setting in. In my bid to avoid rice, I've found a best friend in millet. 

Millet are the best replacement for rice, they taste like rice and they cook like rice. They just are smaller in size, more like broken rice. And right now, they are a rage.

With an entire society reeling with obesity and health issues, everyone is trying to eat healthy, organic, seasonal and local. And millet have gained a large following thanks to that. They are also very nutritious and full of fiber. There are several varieties of millet available with Foxtail millet and Little millet being the closest to rice (according to me). They can also easily replace Quinoa in a recipe, they are much cheaper than quinoa, and close to its nutritional value. Millets are also gluten free. You can read more about millet here.

Now, to my recipe - Millet Lemon Rice. Lemon rice is a very common and popular way to use leftover rice in South India. I have replaced the rice with little millet in my recipe. Just like the regular Lemon Rice is best made with a day old rice, millet lemon rice is best made with cooled cooked millet, preferably a day old. I used half day old millet and it turned out perfect. To cook millet either follow the directions on the packet or cook it the same way you would cook rice. I cooked mine in the pressure cooker, you can cook it in a pan on the stove top or in a rice cooker. 

While tempering the lemon rice, you can add peanuts or cashew nuts to add crunch to the dish. You can also skip the onions and capsicum and just make it plain. 

Millet Lemon Rice can be served as breakfast or meal. It is easy to carry in a lunch box. It can be accompanied with Indian Pickle, Raita or crispy fried papads.

Millet Lemon Rice


Indian style lemon rice made with little milletsLittle millets or Samai are cooked and tossed in a tempering of mustard seeds, lentils, curry leaves, turmeric powder and lime juice. This is the perfect way to use left over millets.

Recipe Type:  Main
Cuisine:            Indian
Prep Time:     30 minutes
Cook time:     40 minutes
Total time:     70 minutes
Yield:                Serves 2

Ingredients:


0.75 cup uncooked Little Millet or 3 cups cooked Little Millet
1.5 cup Water
3 tsp Oil
1 Onion
1 tsp Mustard Seeds
0.25 tsp Asafoetida (Hing)
1 Tbsp Chana Dal (Optional)
8-10 Curry leaves
0.5 tsp Turmeric Powder
1 Lime
0.5 tsp Sugar
0.5 Capsicum
Salt to taste

Method:


1. If using uncooked millets, soak them in water for 30-45 minutes. You can soak them overnight as well.
2. Drain out the water and pressure cook with 2 cups of water and a pinch of salt until done (2-3 whistles). If you don't have a pressure cooker, just cook it the same way you cook rice.
3. Fluff it with a fork and keep aside to cool. Lemon rice works best with a day old millet, so you can prep this a day in advance.
4. Heat oil in a pan and add mustard seeds.
5. Once the mustard seeds splutter, add the chana dal. Allow it to brown slightly.
6. Add the curry leaves and chopped green chillies.
7. Add finely chopped onion. Saute until the onions are browned.
8. Now add roughly chopped capsicum and saute for 3-4 minutes. You can add Cashews or peanuts too.
9. Add the turmeric powder, salt and juice of half lime. Mix well.
10. Add the millet and mix well.
11. Now as per taste, add in more lime juice, sugar and salt.
12. Garnish with the chopped coriander leaves.
13. Serve hot with raita.

Battalu Kadabu Recipe | Steamed Rice Cups [Video Recipe]

Does Breakfast excite you? Are you a cereal from a box person or someone who likes to cook an elaborate first meal of the day? Or a mix of both?

I believe I am a mix of both. There are days when I prefer just bread butter or a simple Coriander Chutney Sandwich, and there are others where I like to put in my love and effort into my favorite meal of the day. Especially on weekends. And this "Battalu Kadabu" has usually been on my weekend breakfast menu, because I believed it took time to make it, until now. I made this on a weekday and actually timed it. And it took me 50 minutes from start to finish to make this and it fed 4 people. And I believe I even ended up taking 50 minutes because I attempted to shoot a video while cooking it. But I don't believe I will make this on a weekday again because I never have that much time to spare on a regular weekday morning, but I definitely don't mind eating them.

So what is this Battalu Kadabu. "Battalu" means bowl in Kannada and "Kadabu" is usually a steamed dumpling. So this dumpling is called so cause it is shaped like a bowl. I learnt this recipe from my mother in law.  It took me a few tries to get it right. 

This dumpling is made with rice semolina. It can also be made with rice flour, but I prefer the rice semolina version that I am sharing. Rice semolina is cooked in boiling water to make the dough. The dough should be slightly sticky and pliable. It should not crumble, if you want to shape the kadabus. If you are struggling to shape it like a bowl, just shape them like little discs. The taste will not differ with the shape.

I love this Battalu Kadabu because it is light. It does not fill me up to the brim and make me sluggish all day. It is vegan and gluten free. Serve it warm with a good spicy coconut chutney like this tondekai chutney made from ivy gourds or heerekai sippe chutney made from ridge gourd. If you are not vegan, fill up these rice cups with some golden ghee, it is delicious.

Battalu Kadabu


Steamed cups made from rice semolinaSteamed dumpling made of rice semolina (rava), eaten as a breakfast in Mangalore along with Ghee and coconut Chutney.

Recipe Type:  Breakfast
Cuisine:          South Indian / Mangalorean
Prep Time:     5 minutes
Cook time:     50 minutes
Yield:              28-30

Ingredients:


2 cups Rice Semolina (Akki Tari)
4 cups Water
0.5 tsp Salt
2 Tbsp desiccated Coconut
2 tsp Oil (to grease steamer)

Method:


1. Heat the water in a kadhai or deep pan.
2. Add the salt and coconut. Allow the water to come to a rolling boil.
3. Slowly add the rice semolina while stirring continuously to avoid forming lumps.
4. Keep stirring and cook it until everything comes together as one mass. This may take 5-6 minutes.
5. Remove from heat onto a dry plate and allow it to cool slightly.
6. Knead it for 3-4 mins, if it feels dry, add a little water and knead.
7. Pull out a small lemon sized ball and flatten it. Using your fingers make a small depression in the center and continue to gently press the edges to make a bowl shape. See video for reference.
8. If you are struggling to make the shape, just flatten them into little discs.
9. Grease the steamer plate.
10. Place them in a steamer and steam for 5-7 mins
11. Enjoy it while its hot with some spicy coconut chutney.

This Corn Spinach Pilaf / Corn Palak Pulao was long in the making.

To those who are new..ish here, we have a small balcony garden where weve been growing a few greens and vegetables. I love eating what we grow, I know it is genuinely organic. There is no pleasure greater than knowing that the food you eat is as healthy as it should be. We feed our plants with compost that we make at home again. Around 1.5 years ago, we started composting our kitchen waste and have not looked back since. Again, that is one soul satisfying venture that lets us keep garbage out of land fills while making enriching compost for our own garden and all it takes is 10 minutes of our time daily.

A few weeks ago, I planted spinach in one of the grow bags out there. If you are just starting out in gardening, spinach is the first thing you should grow. It grows so easily. You plant it and water it once a day and you will see those tiny green leaves popping out in no time. And you now have a fresh supply of baby spinach ready to pluck when you want.

When I have home grown vegetables, I usually make a salad or something similar to let my veggies shine. This Corn Spinach Pulao is exactly that. It is simple, delicate, fragrant and so super easy to make. This is a classic OPOS dish - One Pot One Shot. 

To make the perfect Corn Spinach Pulao, use the best quality ingredients. This is a very simple dish, so there is nothing much to hide behind. Select the best Basmati Rice, preferably something that is long grain and aged. You can use either fresh or frozen corn. And definitely, use the freshest spinach you can get.

Corn Spinach Pilaf | Corn Palak Pulao Recipe

Cuisine:            Indian
Prep Time:     30 minutes
Cook time:     30 minutes
Yield:                Serves 2-3

Ingredients:


1 cup Basmati Rice
2 cups loosely packed Spinach leaves
0.5 cup Sweet Corn kernels
1 large Onion
1 tsp Ginger Garlic Paste
2 Tbsp Oil
0.5 tsp Cumin seeds
0.5 tsp Caraway seeds
1-2 Cloves
1-2 Green Cardamom
1 strand Mace
1 Bay leaf
0.5 inch Cinnamon
1.5 cup Water
Salt to taste

Method:


1. Wash the basmati rice 4-5 times until the water runs clear. Soak and keep aside for 20 minutes.
2. Slice the onions. Wash the spinach thoroughly and chop it.
3. Drain the rice and keep aside.
4. In a large thick bottomed pan, heat oil.
5. Once the oil is hot, add bay leaf and cinnamon.
6. Add all the other whole spices and fry on low heat for 1 minute.
7. Add sliced onions and fry for 1-2 minutes
8. Add ginger-garlic paste and fry until the onions turn golden brown.
9. Add chopped spinach and sweet corn. Stir fry for 1-2 minutes until the spinach wilts.
10. Add the basmati rice and water.
11. Add salt as per taste. The water should be salty when you taste it.
12. Cover and cook on low heat until the rice is cooked. It should take around 15-20 minutes.
13. Serve hot.

Avocado, Cucumber, Carrot Sushi | Vegan Maki Roll [Video Recipe]

Remember here, I spoke of Gee going to Malaysia and shopping in super markets? It paid off, a second time!! It is she who bought me the Nori Sheets and the Sushi Rice all the way from a Japanese store in KL. (You can buy them in Gourmet stores in Bangalore or buy them online).

Well, she looves sushi. And this time she got to eat them sitting at home in her pajamas without worrying if they are really vegetarian. Win-win! I always knew of sushi as a raw fish dish. But the first time I heard of a vegan one was when I was in California and my friend wanted to make me try some. I did not get the chance to try there, but I did try it the first chance I got once I was back in Bangalore and the love affair has continued since. Every single time I see a vegan sushi on the menu, I order it. This was my first time making it at home, but it definitely won't be the last.

Making sushi is really not that difficult, if you have the correct variety of rice. A lot of recipes online say you can use quinoa or brown rice or some other variety of rice. While I'm sure you can work with them if you are a pro at sushi making. For an amateur, sushi rice works best. This rice is very different from the other varieties of rice in my pantry. It is sticky, yet the grains hold their shape. Any Indian rice when cooked to become sticky, will turn mushy and become paste like. And that is definitely a no-no for sushi making. You want to be able to identify the grains, yet have them stick to each other. I was scared when I rolled my first roll, but the rice made it impossible for me to mess it up. So say what you may, according to me it is the rice that is the hero of the sushi. Making the rice is simple, you cook it as per instructions on the packet. Then spread it out in a large bowl or plate and mix in the vinegar, sugar and salt while smashing the rice a little. Adjust the vinegar, sugar and salt to your taste.

Once your rice is ready, you can fill your rolls up with basically anything. Keep it fresh and simple. I filled my rolls with avocado, cucumber and carrots. And for a few, I threw in some sauteed mushrooms as well. The flavor of a sushi comes majorly from the rice and the nori sheets. Nori sheets give the sushi a mild fishy umami flavor. 

Serve sushi with a good quality Soy Sauce, Pickled Ginger and Wasabi paste.

Note: Sushi is usually rolled with a bamboo mat, but the technique is achievable with a kitchen towel and a plastic wrap. Watch the video for more details!

Avocado Cucumber Carrot Maki Sushi Roll

Avocado, cucumber, carrot vegan maki sushi roll
Vegan Maki Sushi Roll made by rolling avocados, cucumber and carrots in sushi rice and Nori sheets.
Recipe Type:  Appetizer
Cuisine:            Japanese
Prep Time:     30 minutes
Cook time:     20 minutes
Yield:                Serves 3-4. Makes 27-30 individual rolls.

Ingredients:


3 Nori Sheets
1 cup uncooked Sushi Rice
2 cups Water
2 Tbsp Vinegar
1.5 tsp Sugar or Jaggery
0.5 tsp Salt
0.5 Avocado
1 Cucumber
1 Carrot
Wasabi paste to serve
Soy sauce to serve

Method:


Making the Sushi Rice:


1. Wash and cook the rice as per instructions on the packet. I rinsed the rice once and pressure cooked it with 2 cups of water for 10 minutes on low-medium heat.
2. Once the rice is cooked, remove it into a large steel or wooden bowl or plate.
Heat the vinegar in a small pan, add the sugar and salt. Once the sugar has dissolved, remove from heat.
3. Add the vinegar to the rice and with a wooden spoon, mix it well. The rice should be sticky, yet retain the grain structure. Allow it to cool.


Making the Avocado Cucumber Carrot Maki Sushi Roll:


4. Slice the avocado and julienne the cucumber and carrot.
5. Take a kitchen towel and spread a plastic sheet on it. I used a clean plastic packet in which I had purchased rice. I cut it into a rectangle and laid it on top of the kitchen towel.
6. Place the nori sheet, shiny side down on the plastic sheet.
7. Take 1/3rd of the rice and place it on the nori sheet. Wet your hands and spread the rice until it covers the nori sheet. Layer it as evenly as you can. It doesn't have to be perfectly even, the rolling later will ensure it spreads evenly.
8. On one edge, place 1/3rd of the cucumber, carrot and avocado.
9. Gently roll the nori sheet until the vegetables are covered. Use the kitchen towel now to compress the vegetables.
10. Continue rolling until the full nori sheet is rolled up.
11. Using the kitchen towel, compress the roll. Turn and compress again.
12. With a sharp wet knife slice the roll into individual maki rolls. Wet the knife between each slice. Do not apply pressure while slicing, make gentle to and fro motions. The roll should be sliced in 2-3 knife movements.
13. Serve with pickled ginger, soy sauce and wasabi paste.

Grilled Cauliflower Summer Bowl

I love one bowl meals, so convenient. You spoon all that you want in one large bowl and then you mix together all the bits and pieces as you eat. Bowl meals are popular in so many cultures - Asians have bibimbaps and a variety of other bowl meals (I'm not sure what they are really called), there are Mexican Rice Bowls - I really really love this, I can never have enough of it. And I'm sure there are thousands more that I've never even heard of. What's your favorite bowl meal?

So while Summer hit its high notes, the weather had mercy and a few drops of rain in patches brought down the temperature a few degrees. Yay! Now I at least don't drag my feet to the kitchen. It was beginning to get so hot that I had almost wanted to give up cooking. Standing in front of a hot stove when the air around you is so hot, was definitely more unappetizing than take away food.

Being a food blogger, I cannot "not" cook food. What will I write about? Life of a food blogger, especially a part time one like me is not at all rosy. Full time office job that pays me a salary takes up all of my day and a good part of my evenings and nights. I'm either travelling or in meetings or on a call. It's not that I hate it, in fact I enjoy a lot of it, but all that leaves me with very little time for cooking. So most of my kitchen experiments or as I call it "Delicious Exotic Cooking" happens only on the weekends. Weekdays are for simple non spicy dinners like this Tendle Bibbe Upkari with chapati. 

Today was a relaxing Saturday. I had planned to not cook anything. Breakfast was at Gee's place where she made this awesome Sabudana Khichdi. And when Sabudana Khichdi is there, I always over-eat. So we were in no mood for a regular heavy lunch. Binged watched movies on TV all day. All that lazing is doing wonders for me!! I finally feel like cooking.

But today we were in no mood for regular heavy spicy weekend lunch. We both wanted something fresh yet filling. Not so sure if he wanted filling, but I definitely am not cooking any snacks with evening tea, so lunch had to keep us full till dinner. So presenting, my Saturday kitchen experiment, *drum rolls* - Grilled Cauliflower Summer Bowl!!

This Grilled Cauliflower Summer Bowl has 4 main components - the spicy grilled cauliflower ( of course), black rice (I told you I cook exotic food), mint coriander oil (ah! so easy) and a fresh summer salad (so refreshing). 

Start by making the mint coriander oil. It is the simplest part of the entire bowl, but also the thing that ties it all together. The mint and coriander need time to infuse into the oil. So I'd start with this. 

Then comes the black rice. Why black rice, you ask? Because I had it!! You can use brown rice or even regular white rice. I loved the play of black and the other colors, plus I had to use the rice, so I used the sexy black rice. Black rice is very similar to traditional brown rice, it needs quite a bit of soaking and it takes time to cook. It also has that bite to it that's generally missing in white rice. Cook the rice you have just the way you want it and it should be good. 

The Cauliflower - marinate it with olive oil, red chilli powder, cumin powder, garlic, lime juice, turmeric powder and salt. I love this marinade, and I use it for all sorts of things - Paneer, Tofu, Chickpeas etc. Let the marinade soak in, then grill the cauliflower until it is done. I did mine in the oven. 

The salad is just a basic salad of raw vegetables with a light dressing of lime juice, olive oil, salt and pepper. I just mixed together colorful peppers / capsicum to brighten up the whole dish. Use whatever you feel like adding to the salad.

Finally just spoon everything in a bowl and enjoy!! I preferred eating it at room temperature as it was a warm day. You can serve it at any temperature you like.

For the Grilled Cauliflower:


2 cups Cauliflower Florets
1.5 Tbsp Olive Oil
1 tsp Red Chilli Powder
0.5 tsp Turmeric Powder
1.5 tsp Cumin Powder
1 tsp Garlic paste
1 tsp Lime Juice
Salt to taste

For the Summer Salad:


1 Cucumber
1 small Onion
1 large Tomato
1/2 cup diced Capsicum (mixed colors)
1.5 Tbsp Olive Oil
1 Tbsp Lime Juice
Salt to taste
Pepper to taste

For the Mint Coriander Oil:


2 tbsp finely chopped Coriander leaves
2 tbsp finely chopped Mint leaves
3-4 Tbsp Olive Oil
1/2 tsp Sugar
Salt to taste
Pepper to taste

For the Black Rice:


1 cup Black Rice
2 cups Water
1/2 tsp Salt

Method:


To make the Mint Coriander Oil: 


Mix together all the ingredients and keep aside until assembling.

To make the Black Rice: 


Wash and drain the black rice.
Add water until covered and soak for 1 hour.
Drain the water.
Pressure cook the rice with 2 cups of water and salt until done but not mushy. You can cook it in a deep pot as well. Black rice takes longer to cook just like brown rice.
Fluff the rice with a fork and keep aside.

To make the Grilled Cauliflower: 


Mix together all the ingredients except the cauliflower to make a marinade.
Add in the cauliflower and rub the marinade. Keep aside for half hour.
Lay out on a baking sheet and grill in the oven for 12-15 minutes until the cauliflower is done.

To make the Summer Salad: 


Roughly dice the cucumber, onion and tomato.
Add the lime juice, olive oil, salt and pepper. Mix well.

To Assemble the Summer Bowl: 


Spoon the rice equally into bowls. Pour the mint coriander oil over the rice.
Place the roasted cauliflower and the salad over the rice.
Serve at room temperature or warm.

When I think of Sunday lunch, I always think of something that is slow cooked and delicious. A dish into which I put my heart and time into. It may be because of my mom. Being children of a full time career woman meant that weekday food was simple and quick. It was still delicious and healthy. My mom made sure we ate home cooked healthy food literally every meal every day. Eating out was a rarity. Working 6 days a week, left out just one Sunday and she made sure that Sunday was special. It was the day she got to cook something special for the large family. A Sunday fare that everyone in the family loved and awaited.

A couple of years ago, I realized I'm turning into my Mom!! Good for me, she is the woman I admire the most, but not so good for my lazy hubby. He gets picked on for not keeping his tea cup in the kitchen sink almost as soon as he finishes the tea, a most definite hand-me-down trait from my mom. I instantly NEED (yes, it is a need) cups and plates and bowls to be kept in the sink as soon as they are empty of food. It may be a really annoying good habit or just OCD, but whatever that is, came from my mom to me.

There is one thing different though, she hated spicy food. Infact, all her siblings do. They cannot stomach anything spicy, they prefer a more bland affair. Luckily for me I can eat spicy a couple of times a week, and then I crave my simple daily home cooked rice-dal type of food.

So while my Sunday lunch is a lengthy affair, it is definitely spicier than my mom's. This Sunday it was a recipe that I'd been wanting to make for a very very long time - Jackfruit Biryani or Kathal Biryani. Can I just tell you something? It was DELICIOUS!!! It was the best biryani I made till date. The aroma wafting through the house from the very first step had us drooling before we even got to eat the biryani. I am actually sorry that you cannot smell this through the photos. You can make this Biryani on anyday, but I'm just being honest in saying it is a time consuming dish and is best made on days when you have the time and do not have to rush through the steps. This is definitely not a quick weeknight recipe.

Biryani is predominantly a non-vegetarian dish in which rice is cooked along with meat and spices. Jackfruit is a perfect replacement for the meat due to is chewy moist texture. And this Jackfruit Biryani can convert anyone to a vegetarian!!

The most boring and tedious job while making this biryani is actually cutting the jackfruit. The sticky milky wax is kinda annoying. Rajeshwari of Rak's Kitchen has provided a beautiful visual tutorial on how to cut a jackfruit. You can follow that until step 2. I used coconut oil instead of sesame oil, use any cooking oil. Once the jackfruit is cut and ready, half your job is done. Salt the pieces and deep fry them. You can also steam them or just use it directly in the biryani and allow it to cook along with the rice and spices.

A major part of the biryani is the rice. Use the best long grained rice you can. Fragrant basmati works the best with this type of biryani. Since the rice is layered along with the masala and cooked again later, in the initial stages, we only parboil the rice. The rice is cooked along with whole spices until it is half done. Then it is drained and washed and kept aside.

The masala, this smells DIVINE. I'm not kidding. This is gonna bring neighbors home, that's how fragrant it is. Traditionally the masala is not vegan, but you can make it vegan. Just replace the Ghee with more Oil and the yoghurt with extra tomatoes. The spices are fried in ghee+oil and then the onion is added. Then come in the ginger-garlic, and this is when the aroma just explodes into your face. Then come tomatoes. If you are replacing the yogurt with tomatoes, just add them now. Add all your spice powders. Once everything is cooked, add in the jackfruit, yogurt, and coriander leaves. Your masala is practically ready.

Then begin by layering the masala, fresh mint leaves, rice. Usually 2 layers are made. Then on the top layer add saffron or turmeric powder mixed with either milk or water and pour. Sprinkle crispy brown onions. Cover and cook on low heat for 20-25 mins or until the rice is done.

You can bake this too. Preheat your oven to around 200 degree C and bake the layered biryani for 20-25 minutes or until the rice is done.

Ingredients:


Fresh Ingredients:


1 small raw Jackfruit / Kathal (600-700gms)
4 Onions
4 Tomatoes
2 handfuls Coriander leaves
2 handfuls Mint leaves
1 Tbsp Garlic Paste
1 Tbsp Ginger Paste

Grains:


2 cups Basmati Rice

Whole Spices:


4 Green Cardamom (Elaichi)
3 Black Cardamom (Badi Elaichi)
1 tsp Fennel Seeds (Saunf)
1/2 tsp Caraway Seeds (Shah Jeera)
5 Cloves (Lawang)
2" Cinnamon (Dalchini)
1 Bay Leaf (Tej Patta)
1 tsp Stone Flower (Pathar ke Phool / Dagad Phool)

Spice Powders:


3 tsp Coriander Powder
1 tsp Garam Masala Powder
1.5 tsp Turmeric Powder
1-2 tsp Red Chilli Powder
1 tsp Cumin Powder

Dairy:


1 cup Yogurt / Dahi (Replace with 1 large tomato for a vegan option)
3 Tbsp Ghee (Replace with Oil for a vegan option)
2 Tbsp Milk (Replace with water for a vegan option)

Others:


3 Tbsp Oil
Oil for frying
Salt to taste
8 cups Water

Method:


Cooking the Jackfruit:


Oil your hands and the knife with any edible oil, preferably coconut.
Cut the jackfruit into quarters.
Peel the thorny skin of the jackfruit. Remove the center stalk.
Dice the jackfruit into 1" sized pieces.
Sprinkle 1/2 to 1 tsp of salt on the jackfruit pieces.
Heat oil in a deep kadhai or pan.
Deep fry the jackfruit until golden.
Keep aside until later.

Making the Crispy Brown Onions:


Slice 2 onions finely.
Deep fry the onions on medium heat until dark brown and crispy. Be careful not to burn the onions.
Remove from oil and keep aside until later.

Cooking the Biryani Rice:


Wash the basmati rice for 5-6 times until the water runs clean.
Soak it in water and keep aside for 20-30 minutes.
Heat 8 cups of water in a large deep bottomed pan. Add 1/2 tsp of salt, 2 green cardamom, 2 black cardamom, 1" piece of cinnamon and 3 cloves.
Once the water comes to a rolling boil, drain the rice and add the rice to the boiling water.
Cover and cook on medium heat until rice is half done.
Drain the water and wash the rice in cold water. Drain and keep the rice aside.

Making the Masala:


I make the masala in the same utensil in which I will be finally assembling the biryani. Use a deep bottomed pan or pot or pressure cooker for this if doing the same.
Finely slice the onions and chop the tomatoes. If you are making a vegan biryani, add one more large tomato.
Heat oil+ghee in a kadhai or pan. Replace ghee with oil for a vegan option.
Gently bruise the fennel seeds, stone flower, 1" cinnamon, 2 cloves, 1 black cardamom and  2 green cardamoms using a mortar and pestle. Do not crush it into a powder, just bruise it to allow it to release it's fragrance in the oil.
Once it heats up, add the caraway seeds (shah jeera) and bruised spices along with the bay leaf.
Saute for 1 minute until fragrant.
Add the sliced onion and cook them until translucent.
Add the ginger and garlic paste and saute for 1-2 minutes until fragrant.
Now add the tomatoes. 1 tsp turmeric powder, red chilli powder, coriander powder, cumin powder and garam masala.
Continue to cook while stirring frequently until the tomatoes are cooked or for 5-6 minutes.
Add the deep fried jackfruit, whipped yogurt, salt and 1 handful of coriander leaves (chopped) and mix well.Skip the yogurt for a vegan option.
Cook on low heat for 1-2 minutes.
Remove from heat.

Making the Jackfruit Biryani:


If you are going to cook the biryani in the same pan in which the masala was cooked, remove half the masala into a bowl.
If you are using a fresh pan to make the biryani, spread half the masala in the new pan.
Chop the coriander and mint leaves.
Sprinkle half the coriander and mint leaves over the masala.
Layer half the parboiled rice over the mint leaves.
Spread the remaining masala on the rice.
Sprinkle the remaining coriander and mint leaves.
Spread the remaining rice on the mint leaves.
Take half the crispy brown onions and spread over the rice. Dissolve 1/2 tsp turmeric in 2 Tbsp milk or water and pour over the rice.
Cover and cook on low heat for 20-25 minutes or until the rice is cooked.
Mix the layers while serving.
Garnish with the remaining crispy brown onions while serving.

  • Now add the tomatoes. 1 tsp turmeric powder, red chilli powder, coriander powder, cumin powder and garam masala.

  • Add the deep fried jackfruit, whipped yogurt, salt and 1 handful of coriander leaves (chopped) and mix well.
  • Cook on low heat for 1-2 minutes.
  • Remove from heat.
  • Take a deep pan, and spread half the masala.
  • Sprinkle half the chopped coriander and mint leaves over the masala.
  • Layer half the parboiled rice onto the mint leaves.

  • Cover and cook on low heat for 20-25 minutes or until the rice is cooked.
  • Mix the layers while serving.
  • Garnish with the remaining crispy brown onions while serving.
