Achari Bhindi Dahiwali

Bhindi/ Okra is not everyone's favourite vegetable, hence, it needs to be gift wrapped nicely to be accepted around the dinner table. So I decided to change the gift wrapper into a achari masala and added curd to it. Went well I must say. So lets add a teaspoon of life into the bhindi... :)

Achari Bhindi Dahiwali

Okra cooked with yogurt and spices
Grilled okra/bhindi cooked with spices and finished off with yoghurt/dahi

300 gms Bhindi /Okra
1/2 cup Yoghurt/Curd/Dahi
1 Tomato
1 small Onion
1" piece Ginger
3 Tbsp Fennel seeds/ Saunf
1 tsp Fenugreek seeds / Methi dana
1 tsp Mustard seeds
2 tsp Coriander powder
1 tsp Cumin powder
2 tsp Red Chilli powder
1 tsp Turmeric powder
1/2 tsp Garam masala
1/2 tsp Amchur(Optional)
A pinch of Hing / Asafoetida
5 tsp Oil


  • Cut the bhindi diagonally into 1" pieces
  • Sprinkle 2 tsp oil on them and grill in the oven for 10-15 mins until they are browned or Heat 2 tsp of oil in a kadhai and sauté the bhindi until they are done
  • Heat the remaining oil in a kadhai and add the mustard seeds
  • Once they splutter, add 1 tbsp fennel seeds, methi seeds and hing
  • Add chopped onions and fry until done
  • Add the tomato and fry until done
  • Add all the masalas
  • Powder or crush the 2 tbsp. of fennel seeds and add to the kadhai
  • Beat the curd and add it to the kadhai and cook on low flame for 1-2 mins
  • Add the bhindi and cook for another 2 mins
  • Serve hot with roti
