Oat idlis

Oats are healthy, but I hate them... n my husband hates them even more... Although the Saffola masala oats are somewhat edible, they do contain cornstarch which isn't too healthy. So I searched online for some edible oats recipes and found this one on Saffola's site which is very good. Idlis are something all south Indian's eat (hopefully) and what better way to eat oats than disguising them as idlis :)

Oat idlis

Curd, rava and oats mixture

Add the tempering to the batter



Spoon the mix into the idli plates

Cook for 10-15 mins

Enjoy idlis with chutney or sambar



Ingredients:

1 cup Yogurt or Thick Curds
0.75 cup plain Oats
0.5 cup Semolina or Rava
A pinch Baking Soda
Oil - 2 tbsp
1 tsp Mustard seeds (Optional)
4-5 Black Peppercorns (Optional)
Curry leaves - 6-8 (Optional)
Green chili - 1 (chopped) (Optional)
Carrot - 1 small (Grated) (Optional)
Coriander leaves - 1 tbsp (chopped) (Optional)
Salt to taste

Method:

Mix the rava in curd and let it rest for 5 mins
Mix the oats in the rava - curd mixture and let it rest for 5 mins
Add salt as per taste
Add the chopped up coriander
Heat 1 tbsp of oil in small vessel, add mustard seeds, and after they splutter, add the  chopped green chilli, peppercorns, curry leaves to the oil
Pour the oil over the oats - rava - curd mixture
Oil the idli containers and in each bowl add a little bit of the grated carrot
Add baking soda to the mixture and mix well
Spoon the mixture into the idli bowls
Let them steam for about 10-15 mins

Serve with sambhar or chutney...

This recipe made 13 small idlis for me... The consistency of the batter should not be as watery of as that of normal idli, it should be thicker..
